Sounds like a good plan, soak the meat overnight in milk to remove some of the gamey taste. Dredge in flour and pan fry before you add to the stew for better flavor. I don't think it'll be all that tough though, they don't do a whole lot of running really. Squirrel isn't that tough for instance and they move around a lot more.Squirrel is kind of like chicken, I'd expect groundhog to be similar. As I understand it the worst part is dealing with a thick layer of fat under the skin. Probably theres a bunch of YouTube videos on it... -Curt

You may have to go out and buy some veggies to put in the pot with the meat if it has consumed the garden but it is a good time of the year for farmers' markets to have fresh veggies at good prices so that should not slow you down too much. Given your intentions, I would suggest that you shoot it or trap it rather than poison it.
