You lose everything cool by using Centos.
Seriously though, PHP 5.1 had a bunch of icky changes to it that mucked
a lot of things up. Don't use it. PHP 5.2 is the best choice if you
want to avoid odd compatibility issues, PHP 5.3 is best if your willing
to dig into code from time to time to fix a few niggling issues[Drupal
itself is PHP 5.3 ready in version 6 and 7 but many of the modules are
PHP 5.2 only. It comes down to passing arrays and objects by reference
in functions being changed slightly in 5.3 to eliminate some bad coding
practices.]
There are also issues, or at least where, with the version of MySQL
currently supported by CentOS.
I highly recommend either not using CentOS for a LAMP server, or being
well prepared and versed in compiling things by hand.
[A minor showstopper for me is that ImageMagick is badly out of date on
CentOS and due to a large number of library dependencies, getting the
latest version to compile WITH liquid rescaling is a tedious process].
I find Ubuntu and Debian to be better for LAMP hosting. Debian still
leaves you a year or more out of date on the latest and greatest which
can cause problems and some manual compiles. Ubuntu often sticks you on
the bleeding edge and you sometimes have to do some manual compiles to
back away from the ledge.
