Hi Richard, I reckon the floors are wood because it's cheap and easy to cut them to size. When Kevin replaced my chassis he fitted new floorboards cut from phenolic resin sheet - light, easy to work, and rot proof.
The tank is mounted on wood to stop it splitting through vibration, but I don't have a clue why the fuel pump is mounted on a bit of thin plate. I would always recommend that you do what you think is best, and hang everyone else's opinions.
