Are you also going to install MySQL on the laptop? PHPMyAdmin runs over the web, so you just need to be able to pull up the PHPMyAdmin website on the laptop in order to use it. There shouldn't be any installation required.
If you want to use a GUI to connect to the remote MySQL server, then use MyCC, Mascon, MySQLFront (discontinued, but still good) or any other the other tools frequently mentioned.
