My gearing and chain puts me around 3k rpm @ 55, no problems.

Around town I will bum about at steady speed under 3k, at least sometimes.
As long as you aren't lugging the engine too low (and believe me, she'll
let you know!) you're fine.

I really wish I had a 6th gear on the interstate.
