I am going to let the real experts give you the technical advise on the carbs, but I wonder if you really need to do this. I think it is a good thing to do if you really want to know your bike and get it perfect, but, what exactly is too much choke? I live in Boston and my 750 doesn't need that much even during winter, but the vf500f needs choke for like 10miles until it really warms up. What I am saying is that different bikes do behave differently. Also, 55 mpg sounds about right. I would advice running seafoam through a couple of tanks and see if it gets any better.
