We use gig ports for our core switches.  I  use both CAT 5e and fiber for
have noticed no difference, but utilization was about 8 to 10 percent.

 

If the distance is within a few feet or the same rack, I use CAT 5e.  If I
have a run from one end of the building  to the other, I use fiber.
