Exactly. I want to get things up and running on the Windows side ASAP, but that's not *as* critical as our AS/400.

I can't conceptualize a situation where I personally would be happy with "a couple days" to recover data, although I do have one client where several days down wouldn't be a huge deal. As an IT guy I just have the burning desire to be able to recover data quickly. I generally have more than one copy of critical data somewhere, usually a copy onsite on some simple RAID1 NAS while the "official" backups are offsite. Think of the NAS as "expendable" backup storage and you get the idea... Why not just invite in a bunch of VAR's, go through your needs and ask them to quote on a solution? And to echo others thoughts, manufacturers will obviously have an agenda, resellers will have an agenda (to sell you something just from a bit wider pool), and even the best meaning consultant will have a certain bias based off what they're familiar with (not to say it won't be a good solution, but you take the point).
