There are two solutions...
1) Download SP1 and other updates and drop them on a CD-RW for when you have to reinstall next
2) Use a network connection and NAT (ICS will do) to connect a fresh install to Windows Update
I use option 2 when I'm setting up computers for others. It doesn't happen all that often, but it means no external access to the machine while it does updates. Since my main machine is reasonably secure, no problems.
