well that's exactly the problem ;-)
you need to assign an IP address to the terminal (thin client) via DHCP. please
 adjust the settings of your DHCP server.

the openthinclient "DHCP" server just acts as a so called "DHCP proxy" and you
still need a running DHCP server.
  
To add by $.05: openthinclient.org may, at some time in the future, support full DHCP. Until then, ThinClients must be supplied with an IP address by a separate DHCP server. The openthinclient.org server then chips in and supplies boot configuration information using the DHCP proxy service (PXE) mentioned by martin.

I guess we should state this a bit more explicitly in the documentation.
