The stuff in the middle is sour cream. For those of you who might be interested in what rakefisk is: You simply clean the fish, and then pour a liquid over it containing sugar and salt. When the stuff is smelly and greasy enough, after a few weeks, you eat it. Who said we Norwegians aren't sophisticated when it comes to food?
