There's a restaurant in Montreal called "Au Pied de Cochon"; they do
sort of Rustic Quebecois cuisine.  Unfortunately for me, I can eat
almost none of it because I can't eat dairy and there's butter in
(almost) everything.

They do a venison tongue with tarragon appetizer that, well, it was the
thing and the whole of the thing.  I should have ordered three and
called it a dinner.  The actual steak frites was good, you understand,
but it wasn't glorious.  The tongue was glorious.
