For me, no debate, Tetsuya's Petuna ocean trout confit with kombu, trout roe, fennel salad and parsley oil. The service is robotic, and sometimes the atmosphere is just ordinary. But this dish makes up for it. I've had it four times now, and it has definitely evolved, each time for the better. Indescribably complex.
