When I connect to Postfix i use smtp.familieberg.name or any other
starting with smtp.

But you are connecting to Postfix, not Dovecot, and use the name starting
with "mail". From your Postfix configuration it seems that Postfix
understands only names starting with "smtp", so it will not provide the
correct cert.
