Where would these parameters be configured.

I have not told it to use postmaster, however, using postconf, it does
return that as the address;

u...@spam {uk} [11:56:26] /etc/postfix: postconf -d address_verify_sender
address_verify_sender = postmaster

I can't see any entries within 'main.cf' relating to these settings.
