The docs say reject_unlisted_recipient rejects mail when the recipient
is not listed in the list of valid recipients for its domain class.

I think you need to read the docs more carefully. Start at http://www.postfix.org/postconf.5.html#reject_unlisted_recipient, follow the reference in that section and follow the references from there as well. It may also help to read http://www.postfix.org/ADDRESS_CLASS_README.html. Maybe skim over them less swiftly?
