There is a setting in iOS mail-client which lets you turn of copying of
sent mail to the Sent folder. Check that on the failing clients. There
is nothing in the mail-protocols per se that forces saving of sent mail,
so either the client has to initiate a save via dovecot, or the MTA
(postfix) has to be set up to do a copy of all submitted mail. The
latter is possible, but a little finicky.
