You could try selecting Clear Brush Controls from the Brushes palette menu.
I think that will do it.

Philip - There is no "bareback jpeg." What's bareback for one person isn't
necessarily bareback for another. That's why the dialog appears every time
you save as a JPEG. If you don't want to see it, probably the easiest thing
to do would be to create an action that uses Save As a step and assign a
function key to it.
