I use them to help soak up vibration from the bars (especially my riv which just has cloth tape which is not very cushiony) and to soak up sweat. My entire body gets completely soaked here in houston so I need something to keep my hands on the bars (grip) and having something to wipe my upper lip or whatever is nice too. I wear a glove playing racquetball too, even though i have nice tape on the racquet. I like the feel and grip better.
