I have a tried number of upright bars and now on a set of Jones Loops. Jones recommends his own normal round rubber/silicone grips and he poo poos things like Ergons. Gotta say for my old hands and maybe even when they were younger, the Ergons are a godsend for comfort compared to having the weight on your hands sliced in half by round grips over many miles. I like the idea of a dremel groove cut into Ergons to make room for cables.
