When I lived in NJ, I used to ride from Easton down to Trenton on the Delaware Canal. https://en.wikipedia.org/wiki/Pennsylvania_Canal_(Delaware_Division) The fall colors were typically outstanding. I've never tried to find a rail route to Easton, but there is bus service there from NYC, and rail service to Trenton.
