The "classic" boxy style rando bag is nice, but not necessarily needed. You
can always use a simple clip or waterproof map case for the route sheet.

I'd start by laying out what you are likely to take with you on the ride -
leave a little extra room for food and such, too.

In this area, the first 200K is in January, which means (for us) cold
weather and ever-present threat of rain, so you need enough to pack layers
and spare gloves.  My first brevet, I ran a L'il Loafer up front combined
with a Banana bag aft.  I now have a small rando bag up front with Keven's
bag aft.  I like to keep tools and repair bits out of the forward
compartment.
