It all comes down to what compromises you want to make while riding. Sure one bike can do it all but, you will be slower riding 55mm tires on a smooth rolling stretch of highway but faster on a bumpy dirt road and the opposite is true with 32mm tires. Of course you may not care about speed or distance traveled or consider it a challenge to ride singletrack on your skinny tires.
