Paul,
If you are trying to boot a Macbook (intel machine), then nothing
under 10.4.8 will boot it, so you cannot even install earlier OS
versions onto an external drive using a Macbook.
The Macbook will automatically boot from Tiger if it can find a copy.
You are going to need a PPC mac if you want to run previous version
of OS X.
If you have one, simply partition your new drive when you boot from
the CD into 5 partitions (save one for 10.5) by choosing Disk Utility
from the Installer menu, making sure you choose a HFS+ Non journaled
File System.
Boot from you 10.1 CD and install it onto the first partition, and
repeat for all OS X versions until 10.4 (or 10.5 if you're a seeded
developer).
Next time you start the computer with this HD attached, simply hold
down the option key, and all of you OS X installations will appear
enabling you to choose which one you want to boot from via simple
pushbutton interface.

Get a big external FW drive
Partition it into however many OS installs you need
Install the various OS' (one per partition)
In the start up disk preference panel select the partition to start
from and reboot
The new FW drive arrived today. From a Mac Mini's PowerPC Tiger OS, I
applied the Apple Partition to it. I also noticed that this is a bit
different to a MacBook's available partition options which have 4
rather than 2 options. But I am having trouble working out how to
install earlier OSs on the partitions. When I try booting from the
10.1 or 10.2 OS CDs, Tiger just starts again without the CD
installation starting. I then tried reinstalling Tiger itself, and
this lets me install the OS onto any of the FW partitions. But what
is the best way to get the other earlier OSs installed on the FW
partititions.
