Depends on what you want to do with it.


   How many users,
   Do they have shell accounts?
   Do you want imap, pop, smtp, webmail, MAPI?
   Do you want spam filtering on the host or the client
   Do you need virus scanning in the SMTP agent?
   how much data will be stored on the server in users accounts
   What e-mail clients will they be using?

There are lots of quick-n-dirty solutions that work fine for simple configs
there are lots of VERY complex solutions that scale and have lots of bells and whistles.
