Phil, assuming that you've run mkswap on the new partitions, you should
then edit /etc/fstab and change the device specification of your swap
partition to the new one.

If you want to test the new swap setup, you can do it as a series of
steps; add the new swap partition to /etc/fstab without changing the
current swap device entry.  Then reboot your system & check to see if 
your system has recognized the new swap partition.  Just cat /proc/swaps
for that, see if the new partition is reflected in there.  If so, then
re-edit /etc/fstab and remove the current swap partition, shut down,
and pull the drive.
