Because you'd have to use flac2aac for that. and flac2mp3 was hot on the list. Of course, you can convert to any format you want. Its is probably better to convert to one that the iPod likes. Bitrate is pretty much an obsolete concept, I don't think too many people really stream these over dial up lines, but it is a nice shorthand for how much compression loss you are interested in.
