This can be done; I've done it successfully with Dolby Digital (AC3)
soundtracks, and DTS files are _this_ close.

Basically, you extract an AC3/DTS file from your DVD (lots of DVD
ripping software exists -- you just need to separate the data by
chapter and demultiplex the 6 channel sound stream into a separate
file).

You then need to convert the file into a format that's suitable for
sending direct to a digital receiver -- that's the tricky bit.  (I've
written a utility to do that, which I intend to post here fairly soon.)
The resultant file is a WAV and sounds like noise over analogue outputs
-- but send it over a digital connection and you've got your 5.1 mix. 
(You can do this via an SB2, and also over a PC's S/PDIF connection.)

Beware that audio from a DVD is at 48kHz, and that the SB2 will
currently play all WAV files at 44.1kHz.  You can get around this by
encoding to FLAC (bonus: you get to add metadata), but DTS-FLAC files
don't sound right (they compress very poorly and I don't think the
decoder can keep up).  I can attest that AC3-FLAC files are absolutely
fine, however -- I've listened to DD5.1 music through my SB2.
