I don't know of other lossless compressed taggable formats other than FLAC; especially not open source :) If you've resigned to ripping with Itunes, and don't want to rip twice, this discussion is moot. EAC will rip to FLAC, MP3, Wav+cue simultaneously, as well as tagging, and giving a rip detail document, and then comparing CRC reads to others who ripped, all at the push of a button. It couldn't be less cumbersome, once set up properly. If you're anal this is the only way to go.
