Mine's a gloriously low-tech method.  I'm sure there's much, much
better/higher quality methods, but this method has involved £0.00
outlay!

I've got a Sony Hi-MD walkman with an analogue in.  Stick Hi-MD disc
in, set record mode to PCM wav, Auto Gain on.  Record vinyl.

Connect to PC - when SonicStage (Sony's godawful software for
connecting their devices and your library) detects a Hi-MD with wavs is
attached, it offers to save them as normal PC wave format to folder of
your choice.

>From there, whack 'em through Audacity (free!) to top and tail  and
save the results.

Open the wav with iTunes, convert to Apple Lossless, manually tag and
done.

I only do it for a handful of vinyl though - mainly my McCartney and
Queen stuff that's not (legally) on CD anywhere
