I use this:

which gives results such as:

Air\Moon Safari\01 - Air - La Femme D'Argent.flac

Personally I don't like including the Genre in the folder structure as
you'll probably change your mind on Genres from time to time, and you
don't want to have to rename all the tracks. Remember you don't need
that structure for SlimServer to be able to use Genres as it can do it
from the tags alone.

I include the Artist in the filename as that way if things ever get
mixed up (or put on another device) the tracks are identifiable.

If you have too many Artists and the reason for adding the Genre level
is to split things up a bit, you could do what I do and add a simple
alphabetical layer, so the ACTUAL location of that track above for me
is 

Z:\FLAC\A\Air\Moon Safari\01 - Air - La Femme D'Argent.flac

Unfortunately I can't see how to do that in one step with EAC, but that
gives me another advantage...

I rip to a FLACRIP area from EAC (no alpha folder), e.g.
Z:\FLACRIP\Air\Moon Safari\01 - Air - La Femme D'Argent.flac

then I check all the tags (several times!) with MP3Tag and only then
move things into the FLAC area, under the appropriate letter within
that structure. That way the FLACRIP area acts as a quarantine area and
stuff only makes it out into the FLAC folder once it's been checked.

Yes, I realise I haven't answered your question but maybe given you
something to think about that may help :)
