I wrote a couple of posts closely related to this kind of problems. My best advice is to use a file format that allow free tag names (flac, ogg) and store all information in your own private set of tags: MY-TRACKTITLE, MY-ALBUMTITLE, MY-COMPOSER, MY-ARTISTSORT Those tags will never change but they can be use as reference for changing all the tags of all your files with a simple MP3Tag command (copy MY-TRACKTITLE in TRACK, copy MY-TRACKTITLE in TRACKNAME for example). The pity is that I don't think iTunes can handle such formats as ogg or flac...
