EAC does create folders for you. I'm guessing you don't have eac configured 100% correctly. Follow the guide to ripping with EAC here: http://wiki.slimdevices.com/index.cgi?EACBeginners There are also a bunch of tools to help automate ripping to flac with EAC. They are strictly optional.
