You are wise to work things out on a subset of your collection before
doing everything.

This would be a good time to investigate Erland's Custom Browse and
Custom Scan plugins that let you use other tags and set up the menu
hierarchy you want.

Your Dvorak set is a compilation of recordings by many different
artists on a number of different record labels.  I don't understand why
having the collection name in the album field will be useful to you. 
Consider putting the work name in the album field.

If you discover you really like some of the music in the sets, you will
start to think of finding other performances.  Then you will want a
browse scheme that lets you find and distinguish the different
performances you own.

You might consider browse hierarchies like

Genre --> Artist (composer) --> Album (work name) --> tracks

or 

Genre--> Composer--> Album name (work name) --> Artist (performer) -->
tracks

Ceejay has written some good advice on tagging classical music for SC
playback.  He is more willing to twist himself into a pretzel than I
am.

If you just want to have the album name "Dvorak - The Masterworks"
appear once,  you might try numbering the tracks on the 40 CDs from 1
to (large number) with disk number blank.

However, there may be some problems if you want to use random play. 
Getting SC or most music players to play all of the movements of a work
in rAndom play isn't trivial.
