That sounds like you're doing a full rescan every night which can cause
problems when albums are allocated new IDs based on the sort order and
your browser cache still points to invalid album covers, resulting in
the blank album cover being displayed.

Usually there should only be a requirement to scan for new and changed
overnight to capture any albums you've added or changed and forgot to
kick off a manual scan.

I'd also add that embedding artwork is more successful than having it
as a separate jpeg file in the same directory because the scanner will
automatically detect changes to the artwork that way without the
requirement for a full rescan and the issues (above) that this can
cause.

My main library has over 1000 albums in it in FLAC format with rock
solid behaviour from the tags and covers, but it did take a bit of work
up front to ensure that the tags were consistent and correct, and a
decision to go with embedded artwork.
