Give that your file structure already has artist name, album name, track
number and name, you can very easily (automatically) convert that info
to tags using mp3tag. You'll need to use the CONVERT filename to tag
option and correctly set up the "mask" that maps directory/file info to
tags. Otherwise, very simple. 

Your format string would likely be something like this:

\%artist%\%album%\%track% - %title%

This would take the artist directory name and make that the artist tag,
the album directory name and make it the album tag, etc.
