Forwarding this to Sage-notebook, where people working on the notebook
may have some ideas.  This sounds like a great idea, but I'm not quite
sure whether it would be feasible, with the notebook being text and
all.

I'm not aware of one, but there might be.

Yes, one selects the cell, then on the main menu "Cell -> Cell
Properties ->
Editable" It is a very useful feature.
