on two different servers that had been running for 3 years. Each IS was around 32 GB. It took about 3 hours and was 5 GB when
it was finished. The biggest
improvement was that the backup didn’t use 32GB of space on the tapes every
night.
But the nightly defrag doesn't reclaim wasted space and shrink the database.
Only an offline defrag will do that and if he has the Standard version then
it would be wise to do it before he his the 16GB limit.

I don't believe so. Server Name and Domain Accounts (SIDs) are part of it's
site configuration. Without it the IS won't start. For an offline disaster
recovery you need an offline PDC with current SAM and Server with same name.

Both. Another path for the upgrade, provided that you have a spare piece of
hardware, would be to build up another Exchange Server in that site an
migrate all the mailboxes and public folders. This would require no down
time and be far less risky.

After the 2K upgrade the Exchange 55 IS won't start. It will ask for a
DEFRAG. You will need to do this to get the IS started again. Be sure to
have enough disk space for the process. You can use a mapped network drive
