I eventually ended up performing an alternative scan of my face, but even
before that, I didn’t have trouble using face ID with or without sun glasses on.

you use sunglasses you are allowed 2 versions of your face
The one thing that might be very helpful is to not set up the attention. Keep
attention off because that way if you end up not looking directly into the
camera it won’t matter.

It's very simple to set up FaceID and VoiceOver will guide you as you go a long.
VO will tell you to look into the camera and help you to get your face
in center, look left, look/turn right, face up left etc etc.
Works very nice and btw you are not required to use FaceID though.
