2 cn Chili with no beans, large
1 lb Cheddar cheese; shredded
1 c Sour cream
1 c Picante sauce
Microwave chili until hot. Add shredded cheddar cheese and mix until cheese
is melted. Return to microwave if needed. Add sour cream and picante sauce
(I use hot). Mix well. Serve with nacho chips or plain corn chips.

I forgot to tell y'all to add 1/tsp of lemon juice to keep the apples from 
turning brown.
Gala apples are suggested for this recipe, the red delicious might be too 
sweet and pulpy.

apples were very tender and so flavorable with the cinnamon, and it's easy 
to make..

Quick Turkey-Spinach Lasagna

1 1/4 c fat-free ricotta cheese 
1 egg 
1/4 tsp ground black pepper 
1 Tbsp minced garlic 
1 Tbsp dried oregano 
1 can (28 oz) crushed tomatoes 
6 oven-ready lasagna noodles (half of a 12 oz box) 
3 c (3 oz) finely chopped or torn baby spinach leaves 
1 1/2 c (8 oz) finely chopped skinless roast turkey 
3/4 c shredded provolone cheese 

Preheat oven to 375°F. Lightly coat a 12-by-8-inch baking dish with cooking 
spray. In a small bowl, beat ricotta, egg, and pepper with a fork until well 
blended. 

Gently stir in garlic and oregano. Spread 1/4 c tomatoes over bottom of baking 
dish and place 3 noodles, overlapping slightly, over sauce. Spread on half of 
the ricotta mixture, half the spinach, half the turkey, half the remaining 
tomatoes, and half the provolone. Top with the remaining noodles, ricotta 
mixture, spinach, turkey, tomatoes, and provolone. 

Coat one side of a 14-inch-long piece of aluminum foil with cooking spray. Lay 
the foil, sprayed side down, over lasagna and loosely seal the edges. Bake for 
about 45 minutes or until bubbling. Let sit for 5 minutes. 

Makes 6 servings. Per serving: 276 cal, 6.8 g fat (3.4 g sat), 26 g carbs, 619 
mg sodium, 4 g fiber, 28 g protein

Chicken Vegetable Skillet

Prep Time: 15 minutes
Cook Time: 10 minutes

1 Tbsp. olive oil
1 lb. boneless skinless chicken breasts, cut into 1" pieces
1 onion, chopped
9 oz. pkg. frozen asparagus cuts, thawed
1 tomato, chopped
1/4 cup zesty Italian salad dressing

Heat olive oil in heavy skillet over medium heat. Add chicken; cook and stir 
for 3-4 minutes. Add remaining ingredients except salad dressing; cook and stir 
for 2-3 minutes. Then add salad dressing, bring to a boil, cook for 2-3 minutes 
until vegetables are crisp tender and chicken is thoroughly cooked, stir well 
and serve. 

Serves 4

Slow Cooker Santa Fe Turkey Breast

Prep Time: 15 min
Start to Finish Time: 8 hr 15 min
Serves: 8

4 to 5 lb. boneless turkey breast, thawed if frozen
1 cup Old El Paso(c) Thick n Chunky salsa
2 tablespoons honey
1 tablespoon chopped chipotle chili in adobo sauce (from 7 oz can)
2 tablespoons cornstarch
2 tablespoons water

Spray 5 to 6 quart slow cooker with cooking spray. Place turkey in cooker. Mix 
salsa, honey and chili in small bowl; pour over turkey. Cover and cook on low 
heat setting 7 to 8 hours. Remove turkey from cooker; cover to keep warm. Pour 
juices from cooker into 4 cup microwaveable measuring cup. Mix cornstarch and 
cold water in small bowl until smooth; stir into juices in cup. Microwave 
uncovered on high 3 to 5 minutes, stirring every minute, until mixture boils 
and thickens. Serve with turkey.

Ham and cheese potato bake

Serves: 6-8



Ingredients:

 . 1 (32 ounce) package frozen hash brown potatoes (thawed)

. 2 1/2 cups cubed fully cooked ham (20 oz)

. 1 1/2 cup shredded Cheddar cheese, divided

 2 cups sour cream

. 2 (10.75 ounce) can condensed cheddar cheese soup, undiluted

 2 (10.75 ounce) can condensed cream of potato soup, undiluted

2 tsp Salt

1tbsp Cumin

2 tbsp Basil

2 tbsp Oregano



Directions:

1. In a large bowl, combine potatoes, ham and 3/4 cup cheese. In another bowl, 
combine sour cream, soups and spices; add to potato mixture and mix

well.

2. Transfer to a greased 3-qt. baking dish. Sprinkle with remaining cheese. 
Bake, uncovered, at 375 degrees F for 55-60 minutes or until bubbly and potatoes

are tender. Let stand for 10 minutes before serving.

3. Enjoy!

These will be a family favorite for generations to come--and so easy!
Preparation time: 20 min   Baking time: 15 min   Cooling time: 5 min
Yield: 12 rolls
Topping Ingredients:
1/4
cup stick LAND O LAKES® Butter, softened
3
tablespoons sugar
3
tablespoons firmly packed brown sugar
3
tablespoons light corn syrup
1/4
cup chopped pecans
Filling Ingredients:
1
tablespoon sugar
1
teaspoon ground cinnamon
2
tablespoons LAND O LAKES® Butter, softened
Rolls Ingredients:
1
(10.6-ounce) can refrigerated bread stick dough
Heat oven to 375°F. Combine all topping ingredients except
 pecans in 9-inch round cake pan; stir until well mixed. Sprinkle with pecans. 
Set
aside.
Combine 1 tablespoon sugar and cinnamon in small bowl. Set aside.
Unroll dough; separate into 12 strips. Spread each strip of dough with 1/2 
teaspoon
 softened butter; sprinkle evenly with sugar-cinnamon mixture. Roll up loosely, 
starting
at 1 narrow end; pinch seam to seal. Place rolls evenly in pan.
Bake for 18 to 23 minutes or until golden brown. Cool 5 minutes. Invert onto 
serving
platter. Let stand 1 minute before removing pan. Serve warm.

Pecan Sweet Rolls

2 tubes (8 ounces each) refrigerated crescent rolls
4 tablespoons butter or margarine, melted, divided
1/2 cup chopped pecans
1/4 cup sugar
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/2 cup confectioners' sugar
2 tablespoons maple syrup

Unroll crescent dough and separate into eight rectangles; seal perforations. 
Brush with 2 tablespoons butter. Combine the pecans, sugar, cinnamon and 
nutmeg; mix well.

Sprinkle 1 tablespoon over each rectangle; gently press into dough. Roll up 
jelly-roll style, starting at a long side. Pinch seams to seal. Twist two or 
three times.

Cut six shallow diagonal slits in each roll. Shape each into a ring; pinch ends 
together.

Place on a greased baking sheet; brush with remaining butter.

Bake at 375° for 12-14 minutes or until golden brown. Combine confectioners' 
sugar and syrup until smooth; drizzle over the warm rolls.

Makes 8 rolls

Tex-Mex Burgers with Charred Onion, Salsa and Avocado

Servings | 4

1 lb. extra lean ground beef
1/2 cup cilantro, fresh, chopped (divided)
1 can (4 oz.) green chili peppers, drained, diced
1 tsp. chili powder
1 tsp. minced garlic
1/2 medium sweet onion, cut into four 1/4" thick slices 
3 serving cooking spray (5 one-second sprays per serving)
4 cup romaine lettuce hearts, shredded
1/2 cup salsa
2/3 medium Haas avocado, diced

Preheat grill or grill pan.

In a large bowl, combine beef, 1/4 cup of cilantro, green chilies, chili powder 
and garlic until thoroughly mixed; form into four 1/2-inch-thick patties.

Coat patties and onions with cooking spray. Grill, turning as needed, until 
burgers are desired degree of doneness and onions are lightly charred and 
tender, about 7 to 9 minutes for medium.

To serve, place 1 cup of lettuce on each of 4 plates. Top each with 1 burger, 2 
tablespoons of salsa, 1 onion slice, 1/4 of avocado and 1 tablespoon of 
remaining cilantro.
