I use it for baking cookies on as well or brownies or banana bread. 
Easy clean up and easy to get out of a pan.

[CnD] chocolate chip cookie question

For some reason, I have lost my directions for my chocolate chip cookie recipe, 
I need to know at waht temp and how long to bake them if I do them as pan 
cookies.  All in one 9 by 13 inch pan.  Any help?

Beef Stroganoff

 

Yield: 4 servings

 

1 1/2 pounds beef tenderloin fillet

Salt and pepper

3 tablespoons butter, divided

2 tablespoons all-purpose flour

2 cups beef consomme

2 teaspoons prepared Dijon style mustard

1/4 cup sour cream

1 tablespoon extra-virgin olive oil or vegetable oil, 1 turn of the pan in a 
slow stream

1/2 small onion, sliced

1 pound extra wide egg noodles, cooked to package directions

Chopped parsley leaves, garnish

Thickly sliced pumpernickel bread, optional

 

Method

 

1. Slice meat into 1/2-thick by 2 -nch long very thin strips and season with 

salt and pepper. 

2. Set in freezer.

3. Heat a skillet over medium heat. 

4. Melt 2 tablespoons butter and cook with flour 1 minute. 

5. Whisk in consomme. 

6. Thicken 1 minute. 

7. Stir in mustard and sour cream, thicken 2 to 3 minutes. 

8. Remove from heat and season sauce with salt and pepper.

9. Heat a second skillet over high heat. 

10. Add 1 tablespoon oil and 1 tablespoon butter, then add the meat and onion 
and cook over high heat until brown on both sides, 3 to 4 minutes total. 

11. Stir to combine.

Slow Cooker Beef Stroganoff 

 

1 (1-pound) top round steak (1 inch thick), trimmed

1 cup chopped onion

2 tablespoons chopped fresh parsley

2 tablespoons Dijon mustard

3/4 teaspoon salt

1/2 teaspoon dried dill

1/2 teaspoon black pepper

1 (8-ounce) package sliced mushrooms (about 2 cups)

3 garlic cloves, minced

1/3 cup all-purpose flour

1 cup beef broth

1 (8-ounce) container low-fat sour cream

2 cups hot cooked medium egg noodles (about 4 ounces uncooked)

 

Method

 

1. Cut steak diagonally across grain into 1/4-inch-thick slices. 

2. Place steak and next 8 ingredients (through garlic) in a 3-quart electric 
slow 

cooker; stir well.

3. Lightly spoon flour into a dry measuring cup; level with a knife. 

4. Place flour in a small bowl; gradually add broth, stirring with a whisk 
until blended. 

5. Add broth mixture to slow cooker; stir well. 

6. Cover with lid; cook on high-heat setting 1 hour. 

7. Reduce to low-heat setting, and cook 7 to 8 hours or until steak is tender. 

8. Turn slow cooker off; remove lid.

9. Let stroganoff stand 10 minutes. 

10. Stir in sour cream. 

11. Serve stroganoff over noodles. 

12. Serves 4.

1 and 1-half pounds stewing beef or any beef cut into squares

1 onion chopped

1 can mushroom soup

1 can mushrooms

1 half-cup water

1 third-cup dill pickle juice, and some chopped pieces of the pickle if desired

3 quarter-cups sour cream

3 tablespoons flour

 

Method

 

1. Place first 5 ingredients in crockpot, and stir.

2. Cook on high four to five hours, low six to eight hours.

3. Thirty minutes before serving, mix sour cream and flour and add to slow 
cooker.

4. Also add pickle juice and chopped pickle.

5. Stir, and cook for remaining thirty minutes.

6. Serve over rice or noodles.

1 jar (4 ounces) sliced mushrooms

1 tablespoon dried minced onion

2 cloves garlic, minced or 1/4 teaspoon garlic powder

1/2 teaspoon dried crushed oregano

1/4 teaspoon salt

1/4 teaspoon black pepper

1/8 teaspoon dried crushed thyme

1 bay leaf

1-1/2 cups beef broth

1/3 cup dry cooking sherry

1 carton (8 ounces) dairy sour cream

1/2 cup all-purpose flour

1/4 cup water

4 cups hot cooked noodles or rice

 

Method

 

1. In a large skillet brown beef in hot oil. 

2. Drain off fat. 

3. In Crock-Pot combine beef, mushrooms, onions, garlic, oregano, salt, pepper, 
thyme and bay leaf. 

4. Pour in beef broth and cooking sherry. 

5. Cover; cook on Low for 8 to 10 hours or on High for 4 to 5 hours. 

6. Discard bay leaf. 

7. If using Low heat, turn to High heat. 

8. Mix together sour cream, flour and water.

9. Stir about 1 cup of the hot liquid into sour cream mixture. 

10. Return all to cooker; stir to combine. 

11. Cover and cook on High for 30 minutes or until thickened and bubbly. 

12. Serve over noodles or rice. 

13. Serves 6.

Dredge beef in flour.

Heat cooker; add oil and brown meat ;

stir in onion, mushrooms, garlic, tomato paste, Worcestershire and wine;

blend thoroughly.

Cover and cook about 45 minutes to 1 hour (depending on tenderness of beef)

Remove lid; stir in sour cream and blend well.

Serve over egg noodles (if you like them).

No specific recipe here, but I use the regular noodles and make my  Lasagna
how I like it and bake it at 400 for about an hour covered, then uncovered
for about 10 minutes.
The noodles that say they are specifically for no bake Lasagna cost more,
and IMO not worth it, the regular ones work just fine.
I do not make it the day before either.
I do pre-cook the beef, and put a little sauce on the bottom of the dish to
keep the noodles from sticking.

[CnD] Ideas for using leftover ham.

Hi, Janet,
All of the recipes posted sound good.  You can also make a quiche with ground 
up or cubed ham, or use some in an omelet.
You can cut some into strips and add it to a salad with strips of cheese, 
turkey and hard boiled egg for a Chef Salad, a nice main dish salad for lunch 
or dinner.

Hi, Claudia,
No, parchment paper is not the same as wax paper; they are not interchangeable. 
 Wax paper is paper coated with wax, used to wrap things to keep moisture in 
and preserve freshness.
Parchment paper is coated with silicone and is good for lining baking sheets to 
keep things from sticking.  It is also used in cooking, to wrap fish to steam 
it, keeping it moist.  
I know of some recipes that ask you to line a pan with wax paper, (a chocolate 
cake, for example), to keep it from sticking to the pan.  I think this was 
before we had parchment paper.  That would now be my choice.

I do it the same way that CC does, but sometimes I use different
cheeses. They may vary depending on who's eating the lasagna. I don't
know about everybody else, but I shred my cheese before I use
it...someone else I know just has hers cut in really thin slices at
the grocery store.

As someone said here before, there are noodles especially made for lasagna. 
You don't have to cook them a day before. Just prepare whatever you want to 
put in the lasagna, ground beef, tomato sauce, zucchini, cheeses, anything 
you like. It's better to brown the meat and sauce before baking the lasagna. 
Spray some oil on the cookie sheet, put one layer of lasagna noodles, 
another layer of the meat and sauce, top with cheese mixture, repeat layers 
finishing with noodles. Bake on 350 for about 40 minutes, add some cheese on 
top and bake a little longer for the cheese to melt. I know that sounds a 
little messed up, not like a well-written recipe. I just told you how I make 
it.

Hi,

  I have made Lazonya before with using regular noodles, making it the day 
before and putting in the frigerator over night and it was the best lazonya 
that I ever made. Point being I do not think you have to cook the noodles if 
you have the time to make it the day before.

relish and shredded american or cheddar cheese for a wonderful sandwich 
spread or use it as an horsd'oeuvres on that party rye bread for special 
occasions.

Also, ground up chicken could be substituted for ham.

Claudia,
There are lasagna noodles that are made for that purpose.
I have used regular lasagna noodles, put the lasagna together the night 
before and kept it in the refrigerator covered with plastic wrap.  The next 
day I bake it after removing the plastic wrap and putting aluminum foil over 
it.  I add about 30 minutes to the cooking time.
I don't have a recipe, I just use what I feel like, so I hope others with 
send you recipes.
Oh, yes.  I did shred a zucchini in with the ricotta cheese and no one was 
the wiser.  There were several "non-green" dinner guests there, too (smile).

A good way to use leftover ham.
40 minutes (10 min prep, 30 min cooking)
6-8 servings

2cups cooked rice
2cups diced ham
1(16 ounce) package frozen broccoli, thawed
1onion, chopped
1cup milk
1can cream of mushroom soup
2cups shredded cheddar cheese

In 2 quart casserole dish,layer ham,rice,broccoli and onion.
Mix soup,milk and cheese in bowl,pour over layers.
Bake at 350 degrees for 30 minutes,or until hot and bubbly.

   HAM-RICE-TOMATO BAKE

2 cups cooked diced ham
1 cup cooked rice
1/2 cup chopped onion
1/4 cup chopped green bell pepper
4 oz can mushroom stems and pieces, drained
16 oz can stewed tomatoes, chopped but undrained
1/4 tsp salt
1/4 tsp ground black pepper
1 cup soft breadcrumbs
1/4 cup butter or margarine, melted

In a large mixing bowl, combine all ingredients except breadcrumbs and
melted butter. Mix well. Spoon into a greased 2-quart casserole. Combine
breadcrumbs and melted butter; toss to mix well. Sprinkle on top of
casserole. Bake, uncovered, at 350*F for 30 minutes. Yield: 4 servings.

   Ham Potato And Green Pepper Casserole
Makes 4 servings

4 cups peeled and thinly sliced potatoes
3 cups cooked ham, cut into 1/2-inch cubes
1/2 medium-size sweet green pepper, cored, seeded, and finely chopped
3 green onions, tops included, finely chopped
2 tablespoons bacon drippings or butter
3 tablespoons flour
3/4 teaspoon dry mustard
2 cups milk
1-1/2 teaspoons salt
1/8 teaspoon white pepper

Preheat the oven to 375-degrees.  Grease a 2 quart baking dish.

Arrange half of the sliced potatoes in the prepared baking dish.  Put the
ham, green pepper, and onion in a bowl and toss to combine.  Scatter this
mixture evenly over the potatoes.  Spread the remaining potatoes evenly over
the top.

Melt the drippings in a small sauce pan over medium heat.  Sprinkle the
flour and mustard into the sauce pan and stir to blend.  Slowly add the milk
and heat, stirring constantly, until smooth and thickened.  Add the salt and
pepper and stir to combine.  Pour the sauce evenly over the potatoes.
Cover and bake for 1 hour.  Uncover and continue to bake for 30 minutes, or
until the potatoes are fork tender and golden.  Remove from the oven and let
cool.

1 cup sour cream

1 can mushroom soup

3 tablespoons milk

2 cups diced ham

1 can sliced mushrooms

1 (8 oz.) pkg. egg noodles, cooked

Parmesan cheese

Blend sour cream, soup & milk. Add ham, mushrooms, & noodles; mix lightly
but thoroughly. Pour into greased casserole dish. Sprinkle with the cheese.

Bake in a 325 degree oven for 30 minutes.

1 package frozen hash brown potatoes, thawed, (32oz)
1/2 cup butter or margarine, melted
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
2 cups shredded Cheddar cheese, (shredded)
1 cup chopped ham, or turkey ham
1 1/2 cups sour cream
1 can cream of chicken soup, (10 1/2oz)
1 can chopped green chile, (4oz)
1/2 cup milk
1/2 cup chopped onion
2 cups crushed potato chips

In a large bowl, combine hash browns, melted butter, salt, pepper, and
garlic powder.

In separate bowl, combine cheese, ham, sour cream, soup, chiles, milk, and
onion. Add ham mixture to potato mixture; mix well. Pour mixture into a
2-quart
baking dish; sprinkle with crushed chips.

1 can cream of mushroom soup
3/4 c. milk to 1 c. milk
1 block piece of extra sharp cheese (I use Waldbaum's in the dairy case 
kind), grated

1 lb. cooked macaroni (#22 shells are the best)

Saute onions and ham in butter and brown. Add soup and milk. Mix well. Add 
cheese and stir. Save some cheese for the top. Pour into a well buttered 4 
quart
casserole top with remaining cheese and sprinkle with bread crumbs and dots 
of butter. Bake in 375 degree oven for 30-40 minutes.


The kids will love this one. Serve with a salad and Italian bread and you 
have a meal everyone will love. Enjoy.

   Ham and Rice Bake

2 cups cooked rice (can use the quick microwave rice)
2 cups diced cooked ham
1 1/2 cups mixed vegetables, cooked, drained
1 can (10 1/2 ounces) cream of mushroom soup
1/2 cup milk
salt and pepper, to taste
1 cup soft bread crumbs, tossed with 2 tablespoons melted butter

Combine cooked rice, ham, vegetables, cream of mushroom soup, milk, and
taste to add salt and pepper. Spray an 8-inch square baking dish or similar
1 1/2 to 2-quart casserole with cooking spray. Spoon rice and ham mixture
into the casserole and spread.

Top evenly with buttered bread crumbs. Cook at 325 for 30 minutes, or until
hot and bubbly. Turn the broiler on for about 2 to 3 minutes to brown bread
crumbs more, if desired. Serves 4 to 6.
