[CnD] Smart Cookies for Wendy

I've never made these.
But here's one with imperial measurements  for you!

Smart Cookies

1 cup shortening
1 cup brown sugar
1/2 cup white sugar
2 eggs
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1-1/2 cups candy-coated chocolate pieces - Smarties, Reeses Pieces, etc.

Preheat the oven to 375° (190° degrees C). In a large bowl, cream
together the shortening, brown sugar, and white sugar until light and
fluffy. Add the eggs one at a time, beating well with each addition,
then stir in the vanilla. Combine the flour, baking soda and salt;
gradually stir into the creamed mixture. Finally, stir in the Smarties®
or Reeses Pieces®. Drop by rounded spoonfuls onto the prepared cookie
sheet. Bake for 8 to 10 minutes in the reheated oven. Allow cookies to
cool on baking sheet for 5 minutes before removing to a wire rack to
cool completely.

[CnD] Oatmeal Smartie Cookies

Oatmeal Smartie Cookies

6 eggs
1/2 pound butter
2 cups white sugar
2 1/4 cup brown sugar
1 1/2 teaspoon vanilla
4 teaspoon baking soda
1 1/2 pounds peanut butter
9 cups oatmeal
1/2 pound chocolate chips
1/2 pound Smarties (or M&Ms)

In a large bowl beat eggs. Add white sugar and brown sugar. Cream. 
Add in order vanilla, baking soda, peanut butter, oatmeal, chocolate 
chips, and Smarties. Mix well while adding each ingredient. Bake for 
12 minutes at 350 deg. F.
This oatmeal cookie recipe makes about 12 dozen cookies. Can be frozen.

Devil of a Good Cake



I have always loved the combination of chocolate and cherries.  If you feel 
the same, you will love this cake.



Cake:



1 package Duncan Hines devil's food cake mix



3 eggs



1-1/3 cups cherry flavored cola



1/2 cup vegetable oil



Frosting:



1 (6 oz.) jar maraschino cherries, drained, reserve juice



One box powdered sugar



1/2 cup butter or margarine, softened



Preheat oven to 350 degrees. Grease & flour a 13x9-inch pan. Combine cake

mix, eggs, cola, and oil in a large bowl. Beat at medium speed with an

electric mixer for

2 minutes. Pour into pan; bake for 33 to 37 minutes or until pick inserted

near center comes out clean.  Place pan on cooling rack.  Frost when cake is

cool.



Make frosting: Chop cherries into small pieces. Combine powdered sugar,

reserved cherry juice & butter in a large bowl. Beat at medium speed with an

electric

mixer until smooth & light. Fold in chopped cherries. Spread over cooled

cake



NOTE:  I didn’t think two minutes was long enough to beat the batter.  That 
just didn’t seem long enough to me, so I beat it for about four minutes.

Remember, you are baking the burgers at about 375 degrees.  The apples give
the burgers a nice taste and you can make a little sauce with the drippings
and a little cornstarch if you like.  You can serve them off the bun with
potatoes and a salad or on the bun with some good cheese and a little
mayonnaise.

You can find apple slices in a jar.  I buy them to use when I bake
hamburgers--laying a slice of apple on each burger.

AUTUMN DUMP CAKE


  1 box spice cake mix
  2 cans sliced apples, undrained (not pie filling)
  1 stick margarine or butter, melted
  1/2 cup chopped pecans


  In a 9x13 inch cake pan, dump in apples and spread evenly. Sprinkle 
with
dry spice cake mix. Pour melted margarine all over dry mix. Top with 
chopped
pecans. Bake at 375 degrees for about 40 minutes or until bubbly. Serve 
warm

with vanilla ice cream.

[CnD] African chicken

Today I decided to try some thing different.
African style chicken.
Mix
2 tablespoons of brown sugar
1 teaspoon of cinnamon
1 teaspoon Nutmeg
1 teaspoon of ginger
Salt and pepper to taste.
I use very little salt.
Peel 2 medium yams or sweet potatoes
1 apple
1 small onion into thin rings and separate them.
Place diced apples, s. potatoes in bowl and coat with spices above.
Get out a chicken breast and evenly flatten the breast.
Get out a casserole dish. Being lazy, I placed foil in the dish and gave it 
a light spray of oil.
Layer the diced coated sweet potatoes and apples in dish and place the 
chicken over the sweet Potatoes/apples. Cover and bake at 350 F for 45 to 50 
minutes or until chicken is done. 165 degrees if using a meat thermometer

I agree about the subject lines and the need for them, but I must
confess that I can only reply to messages, because I do have trouble
with subject lines.  If I create a new message, there's no problem,
but when I try to send it to the group, I never get it in my inbox, so
I don't know if it's gone through.  If I try to circumvent that issue
by changing someone else's subject line, I am unable to get my cursor
to go to the Subject Line field.  Countless times, people have given
instructions, but I am hopeless, I suspect, for the instructions never
work for me.  Thus, I don't send recipes to this group.  I only
respond to messages if I think I have a relevant comment.

Ah well, my poor, thimble-sized brain is overstuffed!

4 cups stuffing mix, + extra for topping

1 cup melted butter

2 cans cream of celery soup

1 can milk

3 cups cooked cubed chicken or turkey

10 ounces frozen peas, cooked, drained

1 tablespoon minced onion



Mix stuffing mix with butter and press in bottom of a 3 quart baking

dish. Combine remaining ingredients and pour over stuffing mixture. Top

with some extra stuffing mix. Bake at 375ºFor 30 minutes.

[CnD] Chicken pizza casserole

Chicken Pizza Casserole



1 3/4 cup tomato sauce

1 teaspoon Italian seasoning

1/4 cup grated Parmesan cheese

1 cup diced cooked chicken breast

1/4 cup sliced ripe olives

2 cups hot cooked rice

1/3 cup shredded Mozzarella cheese



Preheat oven to 375 degrees F.



Spray an 8x8 inch baking dish with olive oil flavored cooking spray.

In a large bowl, combine tomato sauce, Italian seasoning, and

parmesan cheese. Add chicken, olives, and rice. Mix well to combine.

Evenly spread mixture into prepared baking dish.

Bake 20-25 minutes. Evenly sprinkle mozzarella cheese over top.

Continue baking 8-10 minutes or until mozzarella cheese is melted.

Place baking dish on a wire rack. Let set 5 minutes.



Serves 4

I, too, usually delete messages without subject lines.  If I do open them
and find something to reply to, I usually will change the subject line.  For
some reason, when I tried to do this last time, the change didn't go
through.  I'll try to be more careful next time.

[CnD] Hi, re doing subject lines

Here's my shot at attempting instructions/smile:

When I hit control-r to reply to this, I was put in the body of the message. 
Shift tab (the back tab) put me back in the subject line, where I did a 
control-a (which highlited/selected everything in the subject line), and hit 
delete, which deleted everything, at which point I could type in a new 
subject, and then hit the tab key once to get to the body of the message.


Hope that helps.  ... I know how it is though with understanding this stuff. 
I couldn't, back in the day, get about how to copy and paste till it was 
explained in a way I understood.

We made this for show 265, next week's Cooking In The Dark Show...
Show 265.
It is delicious and is now one of my favorite recipes!
The lemon zest dressing tops it off!
Enjoy ya'll!

Roasted Chicken Salad with Apples, Golden Raisins, and Tarragon
Ingredients:
3 cups cubed cooked chicken, taken from roasted legs and thighs
2 large green apples, peeled and cubed
1/2 cup golden raisins
2 tablespoons finely chopped fresh tarragon
1 cup mayonnaise
2 tablespoons rice wine vinegar
2 tablespoons cold water
Grated zest of 1 lemon
Kosher salt and freshly ground black pepper
Butter lettuce leaves, for serving

Assembling the salad:
Combine the chicken, apples, raisins, and tarragon in a large bowl.

Making the dressing: In a small bowl, whisk together the
mayonnaise, vinegar, water, and zest.
Season with salt and pepper.
(We like lots of pepper here.)
Finishing the salad.
Dollop the dressing on the chicken salad and toss to coat.
Refrigerate for at least 1 hour before serving in lettuce cups.
