I have used both gas grills and two different smokers.
I tried the i-Phone timer but prefer my treagor or traegor Junior smoker.
The surface is large enough to smoke and grill 30 large chicken wings.
The thing has a knob which you turn to determine how you want to cook.
You fill the box on the side with wood pelletts which are designed to work with 
this machine.
They come in several kinds of woods so you can determine what flavor the smoke 
will produce.

The first click of the knob is smoke which for chicken generally takes two 
hours.

Then, I take the chicken out, turn the machine up to high, let  x heat up, put 
the chicken back  and let her rip.

The only disadvantage of any smoker is the clean up.
We keep it in the garage and right next to it is a shop vacuum which you need 
after you have cleaned the grill shelf, the lower shelf which we cover with 
foil, but you still need to clean the ashes outof the fire hole.
It is gross, but we do  x together, so  it takes less time.
The results of the cooking make all the clean up worth while.
A friend said after a smoked chicken meal, this food would give vegetarianism a 
bad name.
For her, it  was a high complement.
I agreed.

No, but I'm very careful where things go. I do a lot of prep work, put
things in specific order, and keep a dish for utensils next to the stove
when I'm cooking. I also tell everyone to get out of the kitchen when I'm
working and I won't start cooking anything more than just heating something
up in the microwave if there's anyone else in there.
I learned this from my ex. We kept a wicker basket by the door, and car keys
went in that basket when we walked in the house. In seven and a half years
of marriage neither one of us lost our keys in the house. Intention is the
crux of the solution here -- don't put something down in a random place,
make it sit where you want it to be, and make sure there's some logic to it.
For instance, when I'm cooking something I'll line up the ingredients in
order of what goes in when, and then I'll add them and move things up so I
know what's next. Often I can also rinse things and put them in the
dishwasher while I'm working, so the kitchen is almost as clean when I'm
done as when I started.
It's about creating a process, whatever one works for you, and following it.
I've gotten a lot more ordered since I lost my sight, that's for sure.

Losing something you just had in your hand a second ago will drive you crazy!
Where did I put it? I have asked myself a million times it seems.

It especially gets on my nerves when we have to stop recording a 
Cooking in the Dark show so I can find what I just had  in my hand...


To help me keep my blood pressure down, I have tried to teach myself 
to put things back where they go after I have used them

I am still trying to teach myself this.
Getting better but I did lose the hot sauce today...

I have taught myself to lean my cooking utensil, spoon, spatula, 
tongs, etc, in the sink...

actually I lean them in the front left and corner of my sink.
That way when I need to grab the utensil, I always know where they are...
Keep on trucking Jerry!
Heck, once when I was making a meat loaf, I accidentally added a 
package of vanilla pudding...I thought it was my bag of onion and 
mushroom soup mix...
Anyway, that meat loaf was sweet and it was orange! I did not figure 
out why it was that way until after dinner...my wife still won't let 
me live that one down ! (grin)

Oh yes, Jeri.  I've certainly had my share of disasters in the kitchen.  Like 
Dale, I've learned to make a special effort of putting things exactly where I 
got them.  Sometimes, though, if things get a bit chaotic, I still goof up.

Well this is telling on myself.
Hank is much more organized.
He usually sets stuff on a tray and can find ingredients and utensils.
I like to set utensils in a certain part  of the sink everytime.
My biggest problem is I forget and wash my hands with soap and water 
and well you know how awful a dish can taste after.

I've always been bad about forgetting where I put stuff, whether 
for cooking or anything else. Someone once suggested that I make mental 
notes to myself, e.g.: I'm setting the lid to this bottle just to the 
right of this saucer, near the top edge.


I don't always remember to do that, but when I do, it helps. Also, 
as Nicole mentioned, preparing before you start can really lower your 
stress. I like to gather all my ingredients in one place. As I use them, 
I move them to another predetermined spot. I'm a real slowpoke in the 
kitchen, but getting things ready beforehand makes meal prep go more 
smoothly.


Another time-saver I sometimes use is to fill one sink with soapy 
water before I start on a recipe. For utensils that can't go in the 
dishwasher, or that are not very dirty, I just rinse them a little and 
drop them into my water to soap. I can then wash them up quickly, when I 
have a minute, and clean up the counters with my soapy rag.

[CnD] fustrations and how to help

Hi allI am blessed to have a quest on hand and I also label things. But
for the most past I can smell  spices and know,still it doesn't mean that
I'm always right.
I totally understand all the frustration.
I do know that all we can do is to keep trying till we get it.
Take a breath and start again.
I've learned from Dale and the experiences that before I start my dishes I
take everything out and place them on the counter first.

Ah, yes.  Distractions, disorganization are the biggest things  that keep me
from cooking anything other than microwavable Trader Joe's frozen dimmers.
It is beyond my frustration tolerance to be making linguini with clam sauce
and I can't find the damn garlic.  

Sometimes when I get home from grocery shopping, my driver finds all the
spices and utensils and puts them on the counter with the food.  A big tray
is a great idea.  I would have to remember to put things on it after I use
them.

[CnD] How do you grill?

Hi,

I was wondering how you guys grill stuff. Do you use gas grills, 
charcoal grills, or electric grills? I would imagine charcoal grills to 
be tricky, mainly because i have no idea how to build a fire, and I'm 
not even sure if you can check how much the meat is cooked and such over 
an open flame.


So, any thoughts?

I've used charcoal, gas, and my favorite is a smoker.
With the charcoal, you can very easily build a fire using what is
called a chimney. It is a round metal thing with a platform near the
bottom. You place newspaper under the platform and coals on top. You
light the newspaper which then lights the bricks. Their are wholes
around the edge of the cylendar where the newspaper goes so it can
breathe. The only problem with  this method is that you can't tell
when theey bricks are white.
Thhee gas grill is easy to use.
I like the smoker because it is not as hot so I can place my hands
inside more easily.
As far as temperature, their is a product which works with the IPhone
called an IGrill. It is a thermometer which can be left in the meat.
It has a transmitter which works with the IPhone and can tell you the
temperature of the food. It works well.
