Hello this recipe sounds really good and healthy but yes I heard of the chili 
sauce I am from Arizona and it is coming out there while now I am in Florida 
and I don't think they have it out here I don't think I would have to check.

[CnD] Brine before you Grill

Howdy Folks!
It is time to break out he grills!
We recorded a new cooking show where we grilled steaks, burgers, and chicken.
Actually it was boneless skinless chicken breasts and I did not want 
them to get dry while grilling.

I brined them for about 45 minutes in the vaccuvin marinater.
(got it at Amazon!)
Otherwise I would have let them soak in the brine solution in a bowl 
in the refrigerator for a couple of hours before grilling.
Anyway, long story short, I seared each side of the breast for about 
4  minutes on a very hot grill.

I had the temp up to high on the gas grill.

Then I reduced the heat to a medium, I should hold my hand over the 
grill about an inch above it for about 4 seconds.
I turned them every 4 or five minutes, closing the grill lid each 
time between turning...

Continued this until my Talking Cooking Thermometer read above 180 degrees...
They came out great!
Very moist and not dry at all!
Breasts are so easy to dry out when grilling, especially the boneless 
skinless ones.

To make brine here is the formula I learned for turkeys...
it is for a gallon so just reduce it as you need.
1 cup sea salt to 1 gallon water...
1/2 cup sea salt to 1/2 gallon water (8 cups)
1/4 Cup to 1/4 gallon (4 cups - Quart)
1/8 Cup (2 Tablespoons) to 2 cups, 16 ounces, Pint
Put your bird into the container you are going to use and pour the 
brine solution  in until it covers the bird by about an inch.

Let refrigerate for about 2/3 hours before grilling.
The grilling show will be posted next week.

BROWNIE:
1/2 cup butter
1/2 cup oil
1 cup water   
4 T. unsweetened cocoa
2 cups flour   
2 cups sugar
2 eggs  
1 tsp. baking soda
1/2 cup buttermilk  
1 tsp. vanilla
CHOCOLATE FROSTING:
1/2 cup butter
3 T. unsweetened cocoa
1/3 cup buttermilk  
1 pkg. confectioners sugar
1 cup chopped walnuts   
1 tsp. vanilla

Preheat oven to 350.  Grease, flour a 9x13 inch baking pan.  Mix 1/2 cup 
butter, 1/2 cup oil, water, 4 T. cocoa together in small sauce pan.  Bring to 
boil.  Add cocoa mixture to flour, sugar in a large mixing bowl, beat until 
smooth.   Add eggs, baking soda, buttermilk, vanilla.  Mix well.  Pour into 
prepared baking pan.  Bake 20 minutes.  Prepare frosting while brownies are 
baking.  Put all frosting ingredients in medium saucepan, heat.  If frosting is 
too thin, add a little more confectioners' sugar.  Do not boil.  Frost brownies 
immediately after removing from oven.  Cut into squares when cooled.

PREP: 40 MINUTES
BAKE: 20 MINUTES
COOL: 2 HOURS
Oven
350dg1-a/d cups sug
three fourth cup butter or margarine
one half cup unsweetened cocoa powder
2 eggs
1 teaspoon vanilla
one ande half cups all-purpose flour
1 teaspoon baking powder
one fourth teaspoon baking soda
1 cup milk
1 cup chopped walnuts or pecans
1. Grease a 15 by 10 by 1-inch baking pan; set aside. In a 
pan heat sugar, butter, and cocoa powder over medium heat till 
butter melts, stirring constantly. Remove from heat. Add eggs 
and vanilla. Using a wooden spoon, beat lightly just till 
combined. Combine flour, baking powder, and baking soda. Add 
flour mixture and milk alternately to chocolate mixture, beating 
after each addition. Stir in nuts.
2. Pour batter into the prepared baking pan. Bake in a 350dg 
oven about 20 minutes or till a wooden toothpick inserted near 
the center comes out clean. Cool 2 hours on a wire rack. Cut 
into bars. Makes 48.

The butterscotch flavoring in these brownies comes from the combination of
butter and dark brown sugar, no chips or other flavoring needed.



1/3 cup butter

1 cup dark brown sugar

1 egg

1/2 tsp vanilla

1/2 cup chopped nuts



Melt butter and add brown sugar; cream thoroughly.  At this point, you

Pour into greased 8-inch square pan, and bake at 350 degrees for 25 
minutes.

I think that you just need to add an extra egg. At least that's how it
works with some of the mixes. I don't do well with getting all the mix
out of the pan. What helps though is using a rubber spatula and a
mixing bowl with a spout. Pampered chef makes a couple that are nice.

I would think that a lot of batter would be wasted in the baster. I use a

Butterscotch Brownies

 

1/3 cup Butter

1 cup dark brown sugar, packed

1 egg

1/4 tsp salt

3/4 cup flour

1 tsp baking powder

1/2 tsp vanilla

1/2 cup chopped nuts

 

Melt the butter; add remaining ingredients.  Stir well; pour into greased
8-inch square pan.  Bake at 350 degrees for 25 minutes.  Cut into squares.
Sprinkle with powdered sugar while warm.

[CnD] If you're ordering cooking equipmet, etc.

If you use UPS to order your cooking equipment, there's an 
agreement with your local postoffice.  The person may try to put 
it in your mailbox. In my case, that's a couple of blocks away.   
I've been trying to get a coffee shipment from Gevalia for days.
I'd recommend that we switch to FEDEX, so that our orders come to 
our doors.  When I've paid for delivery, I expect that delivery 
to come to my door.


What if the box of your shipment doesn't fit in your mailbox? 
Well, it goes back to the postoffice.



Enjoy paying cab fare or bus fare to get your order, for us blind 
people.  In my case, that could be as much as $16.00.
