Hi Sharon, Here are two recipes I have saved. Hope one of them works

Penny
Easy Slow Cooked Turkey Breast

1 turkey breast, about 5 pounds
1/2 cup (4 ounces) melted butter
salt and pepper
2 tablespoons cornstarch blended with 2 tablespoons water

Wash turkey breast well and pat dry with paper towels. Sprinkle salt and
pepper over all. Place in large slow cooker. Pour melted butter over turkey
breast.

Cover and cook on HIGH for 6 to 7 hours, or until turkey gets brown and
juices run clear when pierced with a knife. Pour the juice from the slow
cooker into a saucepan.

Bring to boil slowly, then add cornstarch mixture. Add a little chicken
broth, about 1/2 to 1 cup, depending on the amount of liquids left in the
crockpot.
Whisk over medium-low heat until smooth and thickened.





Slow Cooker Turkey Breast

*Hands on time: *45 minutes*  Total time: *4 hours*  Serves: *6
Ingredients:

   1 bone-in turkey breast, about 5 pounds

   Coarse salt and freshly ground black pepper

   1/4 cup madeira wine

   1 onion, halved and thinly sliced

   1/2 teaspoon thyme leaves

   1 large garlic clove, thinly sliced

   1 tablespoon honey

Instructions:
Season the turkey with salt and pepper. Place breast side up in the insert
of a slow cooker. Pour over the madeira; add onion, thyme, garlic and honey.
Seal with the lid. Cook on high heat for 3 to 4 hours, turning once.

Remove to a clean cutting board and drape with foil. Let the turkey rest
before slicing. Pour the broth into a fat-separator or remove the grease
with a spoon. Strain the broth into a small saucepan and bring to a boil.
Taste and adjust for seasoning with salt and pepper. Keep warm over low
heat.

When ready to serve, thinly slice the turkey and place on plate. Spoon over
some of the reserved warm broth. Serve immediately.
Nutrition:
Per serving (turkey breast only): 400 calories (percent of calories from
fat, 40), 52 grams protein, 5 grams carbohydrates, trace fiber, 17 grams fat
(5 grams saturated), 155 milligrams cholesterol, 170 milligrams sodium.



Slow-Cooked Turkey and Dressing

>From Julie Kay

Serves 6

1 (6.6-oz.) pkg. Zatarain's New Orleans style cornbread stuffing mix
3/4 cup warm water
1/2 cup butter, divided
1 onion, chopped
2 stalks celery, chopped
3-lb. boneless turkey breast
1 tsp. seasoned salt
1/2 tsp. pepper

1. Mix stuffing, water, 1/4 cup butter, onion and celery together and put in
bottom of slow cooker.

2. Place turkey breast over stuffing mixture and season with seasoned salt,
pepper and top with remaining 1/4 cup butter.

3. Cook on Low for 6 hours. Remove turkey and slice. Stir stuffing gently
and allow it to remain in cooker for 10 minutes before serving. If stuffing
has too much liquid, turn cooker to High and remove lid for about 15 to 30
minutes or until stuffing is fluffy.

Can anyone give me some tips as to how I should prepare this and for how
long? It is about 2.5 pounds. I figured I could put it in the crockpot with
some broth and spices or could bake but just can't remember how long to
cook-covered or uncovered, dry or with liquid in the pan, etc.

Thanks for these general ideas.
As far as timing, I'll usually use a separate timer. Be it on my iPhone or a 
manual tactile dial crank that's marked every 2 and one half minutes or so that 
I bought at ILA many moons ago. But mostly, it's just the iPhone.
I do have the dials on my toaster oven marked where needed, but as far as the 
timer, I think it's max one hour. My sighted wife used dymo tape for every ten 
minutes for me, but even then, I find it easier to just crank it to the left 
and do the digital timer. When I'm done, I’ll just turn it to off to stop the 
heating element.

So, my question is, how does one toast bread/eggos in the toaster oven? I know 
each toaster oven can be different, but in general terms? I would assume you 
use the toast option on the dial and what? Put it to 400º?
Generally how long do you leave the bread in? Five, six or seven minutes?

I know I can experiment, but I thought I’d ask around to get a basic idea 
before maybe  unnecessarily going through God knows how many slices of bread or 
waffles.

I don't know how much I will help since toaster ovens are all different.
Our toaster oven has a lever you push down to make toast. I don't have to
set the temperature but have a knob I can turn from light to dark. When the
lever pops up a bell dings and the toast is done.
I toast bagels and cinnamon bread in the toaster oven.

Every toaster oven I've had is different. Some have toast settings and some
don't. For the one I have now, which is a black and decker, I think, I keep
it on bake setting and put the temperature to about 350 and toast the bread
for about five minutes. But you have to see what your preference is. the
toaster ovens used to be on medium, light and dark and would pop when they
were done, or shut off. But the two or three ovens I've had recently don't
do that and I find the toast setting either too light or too dark.

It is like taco seasoning, but the instructions were not given for how much to 
use in a given batch of enchiladas, so you would have to add some and taste 
until it seems right. My best guess would be 1/4 cup per batch.

[CnD] CABBAGE ROLL SOUP

CABBAGE ROLL SOUP

Cabbage Roll Soup is the perfect way to enjoy cabbage rolls without all of
the work!  Cabbage, beef, pork and rice are simmered in a flavorful tomato
broth for the ultimate bowl of comfort food.

Yield: 8 Servings 

Total Time: 50 Minutes 

Prep Time: 25 Minutes 

Cook Time: 25 Minutes

 

1 large onion, diced

3 cloves garlic, minced

1 lb. lean ground beef

1/2 lb. lean ground pork

3/4 cup uncooked long grain rice

1 medium head cabbage, chopped (core removed)

1 (28 ounce) can diced tomatoes

2 Tbsp tomato paste

4 cups beef broth

1 1/2 cups V8 or other vegetable juice

1 tsp paprika

1 tsp thyme

1 Tbsp Worcestershire sauce

1 bay leaf

salt and pepper, to taste

 

In a large pot, brown onion, garlic, pork and beef. Drain any fat.

 

Stir in chopped cabbage and let cook until slightly softened (about 3
minutes).

 

Add all remaining ingredients, bring to a boil and reduce heat to medium
low. Cover and simmer on low until rice is fully cooked (about 25-30
minutes)

 

Remove bay leaf and serve.

Try setting your oven at 350 and toasting for six to eight minutes; of course, 
how long you toast it depends on the type of bread and its thickness.  I'm 
assuming that you're using regular store-bought white bread.

[CnD] ALL IN ONE BREAKFAST

ALL IN ONE BREAKFAST

Getting a great start on your morning is as easy as making our All In One
Breakfast! We've loaded this dish with potatoes, veggies, and eggs, and
nestled them together in a creamy, buttery blanket that we like to sprinkle
some cheese over. So, breakfast anyone?

 

4 tablespoons butter

3/4 cup chopped onions

1/2 cup chopped red or green bell pepper

2 boiled or baked potatoes, peeled and sliced

6 eggs

2 tablespoons milk

1/2 teaspoon salt

1/4 teaspoon black pepper

1/3 cup grated Parmesan cheese (optional)

 

In a large skillet over medium heat, melt butter. Add onions and peppers and
saute about 5 minutes, or until onions are softened. Add potatoes and saute
about 10 minutes, or until mixture starts to brown.

 

Meanwhile, in a medium bowl, beat eggs with milk, salt, and pepper. Pour egg
mixture into skillet and sprinkle with Parmesan cheese, if desired. Stir
gently 8 to 10 minutes, or until eggs are set but not dry. Serve immediately

So, my question is, how does one toast bread/eggos in the toaster oven? I know 
each toaster oven can be different, but in general terms? I would assume you 
use the toast option on the dial and what? Put it to 400º?
Generally how long do you leave the bread in? Five, six or seven minutes?

I know I can experiment, but I thought I’d ask around to get a basic idea 
before maybe  unnecessarily going through God knows how many slices of bread or 
waffles.

It is late to mention this, but I believe my point is well taken in this case. 
If you don't want to use the alcohol in this recipe, just increase the amount 
of milk from 1/2 to 3/4 cup and leave the liquor out altogether. The number of 
ingredients in this recipe will flavor it just fine without the extra help.

I'm wanting to make this, but not sure what to substittute for the praline 
liqueur, I can't find it  locally and even Amazon is coming up blank. The 
closest is betty Crocker praline ice cream and cake topping.
Here's the recipe:


Berry Trifle
Makes 18 servings

1 (10.75 ounce) package prepared pound cake, cubed
1 (10 ounce) package frozen blueberries
1 (10 ounce) package frozen raspberries
1 (10 ounce) package frozen blackberries
2 tablespoons praline liqueur
1 (5 ounce) package instant vanilla pudding mix
1/2 cup milk
1 (14 ounce) can sweetened condensed milk
1 (8 ounce) container frozen whipped topping, thawed

Directions
Prep, 15 m, Cook, -, Ready in, 2 h
1, Place cubed cake in bottom of large glass serving bowl. Layer the 
blueberries, raspberries and blackberries on top of the cake. Sprinkle with 
praline liqueur.
2, In a medium bowl, combine pudding mix, milk, condensed milk and 1 cup of 
whipped topping, stir well. Pour mixture over frozen berries. Top custard with 
remaining cool whip. Let sit at room temperature for 1 hour or in refrigerator 
for 2 to 3 hours, enough for the berries to thaw before serving.

[CnD] Toast in the toaster oven

Hello list,

My toaster seems to be giving up the ghost. Toasting unevenly or not enough
or outright carbonating the bread.

And because I’m cheap and don’t feel like buying another toaster, I thought
I’d try out my toaster oven that I already have instead…

So, my question is, how does one toast bread/eggos in the toaster oven? I

1/2 c. cornstarch
1 (6 oz.) pkg. medium hot dry chili powder
1 tsp. garlic powder
1 1/2 tbsp. salt
1/2 tsp. cumin
1/2 tsp. oregano
1 tbsp. paprika
Mix above ingredients together and store in airtight container.
