As for burning your fingers, the only thing I can think of is to

cautious.  It happens to everyone.  Those oven mitts are a great 
idea.

I plan to get some myself at some point.

As for your microwave, you could use braille labels; you could

use inexpensive dots, puff-paint, etc.  It depends on your 
preference
and how comfortable you are finding numbers and other controls 
without
actually having to read each one in braille.  I am very 
comfortable
with braille; however, I am also comfortable with finding 
controls if
I have something to mark them.  As a result, our microwave is 
marked

with plastic jewels from walmart.

I had planned on making some cookies today, and lo and behold, I 
only had one egg and every recipe I had called for two.  I did a 
Google search and found out how to make a fake egg and it worked 
fine.  Here it is for future reference.

Fake Egg Substitute
 1 tsp.  baking powder
1/2 tsp.  baking soda
2 tablespoons flour
3 tablespoons water
 Combine ingredients and mix together with a fork or whisk until 
foamy.  Use

in your recipe in place of an egg.

cookie sheets.  It occurred to me that if I sprayed my hands with 
Pam, the dough wouldn't stick to my fingers.  Worked great.

What material are they made of? I have two mitts that are large 
and kind of clunky, but they're made of a rubbery substance, (it 
may be silicone), and they're great.  Can even be washed in the

Hopefully  someone can help me on this.  I'm trying  to order the cooking 
mitts from Blind mice  Mart.  The Euro style is for smaller hands, right?
the problem I'm having is when I put the expiration date of my credit card. 
It says mm/yy which I assume means that it wants the month and year with two 
digits each.  I've tried 0310, 03/12, 03-12, 032012,  03/2012 and 03-2012 
and I keep getting an error message saying the expiration date is required. 
I'd like the mitts but this is turning out to be way too much trouble.  Can 
anyone help?

Yes I finally did.  Apparently  the year has to have four digits.  Also, if 
you go back in and order something else and want it sent to someone other 
than you, you need to go in and change the shipping address.  I had trouble 
when I tried to save the changes, because I hadn't put in a phone number.  I 
wasn't sure she'd want her phone number put in, but apparently it's a 
required field, but it doesn't have a star beside it, so you wouldn't  know 
that.  Maybe  if I'd read the tips for shoppers, all of this would have been 
easier, but I've ordered online for years, and just figured it would be set 
up like the sites I've used.

Hopefully  someone can help me on this.  I'm trying  to order the cooking
mitts from Blind mice  Mart.  The Euro style is for smaller hands, right?
the problem I'm having is when I put the expiration date of my credit card.
It says mm/yy which I assume means that it wants the month and year with two
digits each.  I've tried 0310, 03/12, 03-12, 032012,  03/2012 and 03-2012
and I keep getting an error message saying the expiration date is required.
I'd like the mitts but this is turning out to be way too much trouble.  Can

[CnD] Oatmeal and the microwave

I used quick cooking oats.  But I just talked to my sister and I think the 
problem was that I cooked it for too long.  I checked with Directions  for 
Me and they said to cook it for two to two and one half minutes.

[CnD] Pigs in blankets

Hello,
It's a tradition at our house to have pigs in blankets, (the hot 
dog and crescent roll thing, not the cabbage thing), on Christmas 
Eve.  I know the basic procedure, although those crescent rolls 
are a pain, (hate finding the perforations), but can't remember 
time or temp.  Recipes, please, and this time I'll keep them.

This is what I found when I googled.




1 pkg.  Pillsbury Crescent Rolls
1 pkg.  hot dogs

Wrap 1 triangle shaped crescent roll dough around each hot dog.  
The ends of
the hot dog will peek out of the "blanket".  Bake 10-15 minutes 
at 450.  Serve

I just checked on the Pillsbury site and they said the temp 
should be 375, not 450 as the recipe I found said.  That sounds 
more like it.
I also called the Eagle Brand company to check on the length of 
of time for microwaving the chocolate chips and milk, because I 
wasn't sure whether it just had to melt or whether it actually 
had to cook.  She said that 5 minutes was too long, probably 
closer to 3 would be about right, and she couldn't find the 
recipe I read to her.  All of her recipes had three cups of 
chocolate chips, not 2 and none of them had peanut butter.

I made this yesterday, but after talking to the Eagle brand 
people, I used 18 ounces of chocolate chips, and after cooking it 
for about 4 minutes, stirring every minute.  I poured it into a 
pan I lined with no-stick foil, having foil hang over the ends so 
that after it hardened, I could just lift it out, peel off the 
foil and cut it into squares, with a knife I kept running under 
hot water so it wouldn't stick as I cut it.  I'd never made fudge 
before, and this turned out great.

[CnD] Pyrex portables help

I use them all the time.  The only things I would suggest are to 
let the muffins cool a few minutes before removing them, and when 
you do, go underneath each cup and push up on the underside and 
they'll pop out.  I assume you know that you need to put the pan 
on a cookie sheet so that it will stay stable when you bake them.

Is the box still sitting at the level it had coming from the store? If so,
use your measuring cup and count them. This will tell you how many cups of
dry cubes are in the box.

an example.

Let's say that Brand A stuffing comes in a 6oz. box and serves 4. Brand B
comes in a much larger container, we don't know how many ounces it has (or
even grams) and it holds 24 servings. We want to get an equivalent amount
out of Brand B's container. So we take a measuring cup and count the number
of cups in Brand B's container. Let's just say for the sake of example it
held 12 cups. This tells us that a half a cup is a serving. (12 cups divided
by 24 servings equals .5, or ½ cup per serving) So this tells us that to
make four servings of Brand B we need two cups of Brand B stuffing mix,
which is the equivalent of Brand A's 6 ounce box.

Is the box still sitting at the level it had coming from the store? If so,
use your measuring cup and count them. This will tell you how many cups of

First of all, I'm sorry, it turns out that it's only 170 grams for 6
ounces...I had a box, so I measured, and it has 3 cups of bread crumbs
and seasoning...Thought it might be easier than doing a lot of

I know how hard it is, particularly as a teenager, to not be 
worried about how things look.  Your concern reminds me of a 
story my husband tells.  When he was in his late teens, his older 
brother urged him to use a cane or dog.  He was reluctant, 
because it would make him look blind.  As his brother said: 
"well, you are blind, and people can see that." Once he thought 
about it, he knew that was true.
I came in late on this thread, so you may have answered this.  
Can you get any help from a rehab teacher? It's hard to have 
family members teach you, at least it was for me.
One further thought.  Given the state of the airline industry 
right now, you won't have to worry about cutting food on a plane.  
You never have to cut peanuts, assuming you even get those.  Lol.

Release foil.  I think that's the name.  It's foil that is coated 
so that it's nonstick.  It's more expensive than regular foil,

I haven't read every e-mail on this thread, but wanted to mention 
one of my favorite cookbooks.  The book is: A Leaf From our 
Table, and it was put out by the Catholic Guild.  I love it.
I'd love to get a new copy of the first Our Special Cookbook, 
but when I called and left a voice mail, asking if it was still 
available, I never got a response.
Another book that I really liked and don't have any more was 
called Forum Feasts.  Unfortunately it was on thermoform and the 
book didn't wear well.  Does anyone have it?

You're right on the celery and I feel the same way you do about 
ending up wasting some.  I've found that if you cut off the tops 
of each stalk and a couple of inches at the bottom of each stalk 
and then wrap them in foil, the celery keeps for several weeks.  
I can usually use it by then.

[CnD] Gelatin salad recipes

type salad since my husband is allergic to onions and I want to make sure

There's a recipe in the OUR Special cookbook called Cottage 
Cheese Salad.  It calls for 16 oz.  of cottage cheese, a can of 
crushed pineapple, I think 20 oz., and it mentions a package of 
strawberry JELL-O and a small carton of Kool Whip.  Has anyone 
made this.  Do you think you mean a 4-serving sized package of 
Jell-O and is a small carton of Kool Whip an 8 oz.  container.  I

[CnD] Softening butter

Hello,
I'd like suggestions about softening butter.  I use soft 
margarine, but my husband likes butter.  Usually I use the Land O 
Lakes butter that is spreadable right from the fridge, but we 
were given some regular butter by friends who got it free and 
don't use butter.  I know it can't be left out or it will get 
rancid, but it's way too hard to spread right out of the fridge.  
I nuked it for 20 seconds, and it softened, but some of it 
melted, which wasn't what I had in mind.  Other than doing it for 
slightly less time, does anyone have any suggestions?

I had that one, and liked it when it worked, but had to replce it 
twice when it died, and I found that replacing the batteries 
wasn't easy.  Those little tiny button batteries are a pain.

[CnD] Summit Iddd mate

Hello,
I sent a message to the list last night, but got an automated 
message that said it hadn't gone through, so I'm writing again.
I just got my I.d.  mate and really like it, but have some 
questions, on or off list for anyone who can answer them.
I get the impression that the unit beeps when it's ready and 
then beeps when it gets a reading, but I haven't heard it do the 
second beep.  Am I wrong in my assumption that it beeps when it 
gets a reading.  About how long does it take before it start 
reading? What is the best way to scan effectively? Should I put 
the scanning window directly on the package and then pull it 
away?
Thanks for any help anyone can give.  It's an amazing product and 
I'm trying to read all kinds of things, just because I can.

Hi everyone,
We just got our Summit IddD mate and we like it, but we're having 
trouble with scanning.  I've tried to scan a cereal box and I 
can't get it to show a reading, let alone read the package info.  
Any tips and tricks by those of you who use it would be 
appreciated.  Is it better to move the scanner or the thing to be 
scanned? Thanks for any help.

Bake for 40 minutes or until golden brown.



Note: If not fully brown, broil on high (under top-only heat) for 
about 5 minutes to make a crispy top.  Watch carefully while 
broiling!




Serve with vanilla ice cream.  Enjoy.

Ingredients



4 chicken breast halves

1.Preheat oven to 400.  Beat egg in a bowl.  Combine

cheese in resealable bag and crush crackers.  Cut chicken into ¼ 
inch

strips.

2.Dip chicken into egg and drain excess.  Place in bag, 
seal and
shake to coat.  Place in single layer on jelly roll pan.  (I do 
not own a

jelly roll pan so I have used a glass casserole dish.)

3.   Cook uncovered for 10-12 minutes or until no longer 
pink.


I have cooked this twice and both times it took at least twice as 
long on

the cooking time.   What am I doing wrong?

[CnD] Old South Praline Cake

I haven't made this, but it sounds so good!
Old South Praline Cake


1 (18oz) box butter pecan cake mix
1 (16oz) container coconut pecan frosting
4 eggs
3/d cup vegetable oil
1 cup water
3/d cup toasted and chopped pecans, divide use


Preheat oven to 350 degrees
Grease and flour 10oz Bundt pan.
 Combine cake mix with frosting, eggs, oil, water, and half of 
the pecans.

Stir until all ingredients are combined.
Sprinkle remaining pecans into Bundt pan.
Pour cake batter into pan.
Bake about 50 minutes or until done.


Makes 12 servings

As I wrote yesterday, my husband is looking for  birthday ideas

mentioning the slice solution brownie pan.  I'd love to hear what 
others think about this before I  suggest it to him.  I went to

[CnD] a burger question

Hello,
I like cheeseburgers and I cook my burgers on the George Foreman grill. 
Even though I put Pam on the grill before I heat it, when I put a slice of 
cheese on my burger for the last minute of cooking so that it will melt, it 
always ends up sticking to the top grill plate.  Any suggestions?

As others have said, I use an ice cream scoop to fill regular 
greased muffin cups.  I use the kind with a gadget that puts the 
ice cream, or in this case the batter, off the scoop.  I put a 
little Pam on my fingers and go over the scoop with my fingers 
before I start, and the batter just slides off into the muffin 
cups.  I use a silicone muffin pan, which makes things even 
easier.

Mix well. This is equivalent to 1/3 cup of canned evaporated milk. 


For 1 cup:
1 cup nonfat instant dry milk powder
18 TBS water (1 cup plus 2 tablespoons)

[CnD] Triple Chocolate Mess

I've made this for a group and it's wonderful, and so easy!
Triple Chocolate Mess
Prep Time: 10 minutes
Cooking Time: 480 minutes
Servings: 12
1 chocolate cake mix
8 ounces sour cream
1/2 cup chopped nuts
1 cup chocolate chips
1 package instant chocolate pudding mix
3/4 cup oil
3 eggs
1 cup water
Mix all ingredients together and put in crockpot sprayed with 
Pam.  Put crock pot on low and cook for 8 hours.  Serve warm with 
ice cream or Cool Whip.  Allison Fallin

Sorry  I didn't include that.  When I transferred  the recipe  to my Apex, I 
didn't include the size of the package, so I'm glad you asked.  It's the 
four ounce package which I think is the large. I'll try to find out for sure 
and post on the list, unless someone else knows for sure and can post it. 
Obviously I haven't made this for a while or I'd know.

My math skills went ker flewie!  I guess I'm not used to seeing times
written without using the lowest common denominator.  To me, 8 hours would
