Whole-Wheat Bread 

Ingredients:
1 package of active dry yeast 
3 tablespoons of dark brown sugar 
3/4 cup of warm water (105 to 115 deg F) 
2 3/4 cups whole wheat flower 
3 tablespoons nonfat dry milk powder 
3 tablespoons vegetable oil 
1 large egg 
1 teaspoon salt
Directions
Stir yeast and sugar into water; let stand until foamy, about 5 minutes. 

For food processor fitted with metal blade or mixer with dough hook, put flour, 
milk powder, oil and egg or egg whites into bowl. Turn machine on and combine 
mixture. 
With machine running, slowly add yeast mixture. Mix until dough cleans sides of 
bowl. 

If dough is too sticky, add more flour by the tablespoon, working it in before 
adding more. If dough is crumbly and dry, add more water by the teaspoon, 
working it in before adding more. Once desired consistency is reached (moist 
but not sticky), mix dough until well kneaded, uniformly supple and elastic, 
about 40 seconds in food processor, about 6 minutes in mixer. 

If mixing by hand, put ingredients in large bowl. 
Mix well. Make well in center, pour in yeast mixture and work into ingredients, 
then knead on floured board until smooth and elastic, about 10 minutes. 

Transfer dough to large plastic bag, squeeze out air and seal at top. Place 
dough in bowl. Let rise in warm spot until doubled, about 1 hour. 

Oil a baking sheet. Punch dough down and shape into smooth ball. Place smooth 
side up on baking sheet. Cover loosely with oiled plastic. Let rise in warm 
spot until doubled, about 40-50 minutes. 

Preheat oven to 375F. Fifteen minutes before baking, put rack in center of 
oven; dust dough top lightly with flour. 
Make a decorative slash across the top. Bake until bread is well browned and 
sounds hollow when rapped on bottom, about 30-35 minutes. 

Immediately remove from pan and cool on rack. 

Makes 1 Loaf

Old Spaghetti Factory's Clam Sauce

15 min 5 min prep 
6 servings 1 batch 

3 ounces butter 
2 cloves garlic, chopped fine 
1/2 onion, chopped fine 
3 stalks celery, chopped fine 
3 tablespoons flour 
2 (8 ounce) cans chopped clams, with juice 
1 quart half-and-half 
1 teaspoon salt 
1/4 teaspoon white pepper 
1/2 teaspoon thyme


Combine first four ingredients in a saucepan. 
Saute over medium-low heat until vegetables are tender but not brown. 
Add flour and mix to make a roux. 
In another saucepan, combine the juice from the clams, half and half, salt, 
white pepper, and thyme; heat until just below boiling. 
Add the half and half mixture and the clam meat to the roux. 
Stir until the sauce thickens. 
Serve over your favorite buttered spaghetti noodles with generous portions of 
Parmesan cheese..

Dark Chocolate-Amaretto Cake

You don't need liqueur for this cake. Its subtle amaretto flavor comes from 
almond extract and coffee creamer.
Ingredients
1 (18.25-ounce) package devil's food cake mix with pudding 
1 (5.9-ounce) package chocolate fudge instant pudding mix 
1 1/4 cups water 
1/2 cup vegetable oil 
1 tablespoon almond extract 
4 large eggs 
3 cups semisweet chocolate morsels, divided 
1/2 cup amaretto-flavored liquid non-dairy creamer 
3 tablespoons sliced natural almonds, toasted 

Preparation
Combine first 6 ingredients in a large mixing bowl; beat at medium speed of an 
electric mixer 2 minutes. Stir in 2 cups chocolate morsels. Pour batter into a 
greased and floured 12-cup Bundt pan. Bake at 350° for 55 to 65 minutes or 
until a wooden pick inserted in center comes out clean. Cool in pan on a wire 
rack 10 minutes; remove from pan, and cool completely on wire rack. Combine 
remaining 1 cup chocolate morsels and amaretto-flavored creamer in a small 
saucepan. Cook over medium heat, stirring constantly, until chocolate morsels 
melt. Remove from heat; let stand 15 minutes. Drizzle chocolate glaze over 
cake; sprinkle with almonds. 
Yield
one 10" cake

Upside Down Gingerbread

Topping:
1/2 cup firmly packed brown sugar
1/4 cup butter, melted
1 (8 ounce) can pineapple chunks, in unsweetened juice, drained
3/4 cup fresh or frozen cranberries
1/4 cup chopped fresh pecans

Gingerbread:
1 1/3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
3/4 teaspoon cinnamon
3/4 teaspoon ground ginger
1/2 cup firmly packed brown sugar
1/2 cup butter, softened
1/2 cup boiling water
1/2 cup molasses
1 egg, slightly beaten

Heat oven to 350 degrees F. Combine 1/2 cup brown sugar and 1/4 cup butter, 
melted. Spread in bottom of ungreased 9-inch square pan. Arrange pineapple in 3 
diagonal rows over sugar mixture; sprinkle cranberries and pecans around 
pineapple. Combine flour, baking powder, baking soda, salt cinnamon, ginger and 
allspice; mix well. Add all remaining gingerbread ingredients; blend well. Pour 
batter evenly over pineapple, cranberries and pecans. Bake at 350 degrees F for 
45 to 55 minutes, or until a wooden pick inserted in center comes out clean.
Cool upright in pan for 2 minutes. Run knife around edge of pan; invert onto 
serving plate. Cool at least 30 minutes.

If desired, serve warm with whipped cream.

add the sugar slowly, continuing to beat until very light and 
smooth. Add the cottage cheese to the egg mixture, blending well, then 
add the sour cream, cornstarch, lemon rind, and walnuts (if desired). Stir 
until all ingredients are well blended and the mixture is smooth. In another 
large mixing bowl, beat the egg whites until they form soft peaks, then gently 
fold them into the batter. Pour the mixture into the prepared crust and bake 
for about 1 hour. Cool to room temperature before serving.

Easy BAKE SHOPPE Marbled Brownies 

Ingredients: 
CREAM CHEESE MARBLE(recipe follows) 
2/3 cup all-purpose flour 
1/4 teaspoon baking soda 
1/4 teaspoon salt 
1/2 cup sugar 
2 tablespoons butter or margarine 
2 tablespoons water 
1-2/3 cups HERSHEY'S SPECIAL DARK Chocolate Chips or HERSHEY'S Semi-Sweet 
Chocolate Chips, divided 
2 eggs, slightly beaten 
1 teaspoon vanilla extract 
Directions:
1. Heat oven to 350°F. Line 8-inch square baking pan with foil; grease foil. 
Prepare CREAM CHEESE MARBLE; set aside.

2. Stir together flour, baking soda and salt. Combine sugar, butter and water 
in medium saucepan. Cook over low heat, stirring constantly, until mixture 
comes to a boil. Remove from heat; immediately add 1 cup chocolate chips, 
stirring until melted. Stir in eggs and vanilla until blended; gradually add 
flour mixture, blending well. Spread 2/3 of chocolate batter into prepared 
pan.. 

3. Spoon CREAM CHEESE MARBLE over chocolate; drop spoonfuls of remaining 
chocolate batter onto cream cheese. Gently swirl chocolate batter into cream 
cheese with spatula. 

4. Bake 35 to 40 minutes or until brownies begin to pull away from sides of 
pan. Cool completely in pan on wire rack. Remove from pan; peel off foil. Cut 
into squares. About 18 brownies. 

CREAM CHEESE MARBLE: Beat 1 package (3 oz.) softened cream cheese and 1/4 cup 
sugar in small bowl until smooth. Add 1 egg and 1/2 teaspoon vanilla extract; 
beat well. Stir in remaining 2/3 cup chocolate chips. 


MINT VARIATION: Substitute 1-2/3 cups (10-oz.pkg.) HERSHEY'S Mint Chocolate 
Chips . Add 2 drops green food color to CREAM CHEESE MARBLE, if desired.

Red Rice
Red rice is the handiest sort of dish to have in your repertoire because it 
goes so well with most main meat dishes, whether it is barbecued chicken or 
meat, ham, or roasted meat. 


Ingredients
2 to 4 strips bacon
1 onion, finely chopped
1 red or green pepper, chopped
1/3 cup tomato paste
1 1/2 cups water
2 tsp. sugar, optional
1 tsp. salt
1/8 tsp. freshly ground black pepper
3/4 cup long-grain rice
2 Tbs. chopped parsley, optional

Directions
Cut bacon into 1/2-inch pieces. Put into heavy saucepan with lid. Saute for 3 
to 4 minutes until crisp. Remove bacon and reserve.

Add onion and green pepper. Saute for 2 minutes. Add tomato paste, water, 
sugar, if used., salt, black pepper and rice. Blend well. Heat to boiling.

Cover and steam for 20 to 25 minutes or until rice has absorbed all the liquid.

Sprinkle with reserved bacon and chopped parsley. Serve immediately or cover 
and keep warm until ready to serve.

Comments
Good served with Baked ham, buttered broccoli, green salad and fresh fruit for 
dessert.

Red rice is best when served immediately after cooking. However, it does reheat 
well in the microwave oven. Place in a glass or ceramic, non-metallic dish, 
cover and reheat.

Junior's Hot Fudge Sauce

Description Junior's is famous in the Brooklyn area. But you don't have to live 
there to enjoy their rich, thick hot fudge sauce.

Ingredients

1/2 C. unsalted butter
3/4 C. unsweetened cocoa powder
2 ox. bittersweet chocolate, chopped
1/4 tsp. salt
1 (14 oz.) can sweetened condensed milk
1/2 C. heavy cream
1 Tbsp. pure vanilla extract


Directions

Melt the butter in a small saucepan over medium heat. Stir in the cocoa, 
chocolate, and salt, and cook until the chocolate melts. Slowly stir in the 
milk and cream and heat until the sauce is smooth and warm. Stir the sauce 
constantly and watch it carefully so it does not boil or stick to the bottom of 
the pan. Remove the sauce from the heat and whisk in the vanilla. Store any 
leftover sauce in a covered jar in the refrigerator. To reheat add an extra 
tablespoon or two of cream and stir constantly over medium heat until hot.

Ingredients

1 C. Bisquick
salt and pepper to taste
1/3 C. water
1 C. salsa
1 can refried beans
1 C. shredded cheddar cheese
1 lb. ground beef

Directions

Mix Bisquick, water and refried beans together and put it in the bottom of a 
greased pie plate. Brown and drain seasoned ground beef; put on top of mixture 
in pie plate. Add salsa and then cheese. Bake, uncovered, for 30 minutes at 350 
or till golden brown. Serve with extra salsa, sour cream and mexican chips. Can 
be made the night before and refrigerated; then put in the oven.

greased and floured loaf pans. Bake at 350 degrees F for one hour.

Fresh Tomato Pizza 

Ingredients:
4 large pita pocket breads, left uncut and whole 
4 tablespoons extra virgin olive oil 
4 teaspoons fresh basil chiffonade 
4 to 6 large beefsteak tomatoes, or 12-16 plum tomatoes, sliced thin 
4 cups grated Pizza Cheese 
4 tablespoons grated Parmesan cheese 
Directions
Preheat oven to 450F degrees. On a large heavy baking sheet, lay aluminum foil 
down. Lay all four pita bread rounds on the baking sheet Drizzle a teaspoon or 
so of olive oil on each pita bread and about a Tablespoons worth of grated 
cheese. 

Layer the entire top of the pita bread with sliced tomatoes, in a circular 
pattern for asthestics. Drizzle another teaspoon or so of olive oil on top of 
the tomatoes. Sprinkle the sweet basil on top of the tomatoes. Sprinkle the 
parmesan cheese on top of the 
tomatoes. Use the remaining grated cheese and distribute it equally on top of 
the tomatoes between the four pita bread rounds. Drizzle the remaining olive 
oil on top of cheese if there is any left. 

Bake at 450F degrees for about 10-15 minutes. The crust and scatterings of the 
cheese topping will have a rich toasted appearance. Let them sit for a few 
minutes, then using a metal spatula, lift them off th e baking sheet and onto 
plates!

Kiwifruit Dessert Sauce

This light and flavorful sauce helps complement your favorite dessert or ice 
cream.

2 tablespoons unflavored gelatin powder 
1/3 cup cold water 
2 pounds kiwifruit (approximately 9 to 10) 
6 ounces granulated sugar 

Sprinkle gelatin over the cold water and set aside to soften. Peel the 
kiwifruit and blend in a food processor or blender until pureed. Be careful not 
to over-process; the black seeds will break and change the color of the puree. 
Add the gelatin mixture to the kiwi puree. Heat mixture to about 110°F; do not 
overheat. If mixture gets too hot, pull off heat and stir constantly. Continue 
to stir until all gelatin is dissolved. Keep covered in a refrigerator. 
Makes about 1 1/4 cups.

Whole-Grain Buttermilk Bread
Here is a full flavored, compact, nourishing whole-grain bread made with wheat 
germ, rye flour, and all-purpose flour, with a crunchy dusting of oatmeal. To 
make the bread extra chewy, use a stoneground dark rye flour. 


Ingredients
1 cup warm water (105F to 115F)
1 pkg. active dry yeast
1 Tbs. honey
4 cups unsifted all-purpose flour (approx.)
2 cups buttermilk
1 Tbs. salt
1 cup wheat germ
2 1/2 cups rye flour
1 egg white, slightly beaten with 1 tsp. water
3 Tbs. rolled oats

Directions
Place warm water in large bowl; stir in yeast and honey, then 1 cup all-purpose 
flour. Let stand in warm place until bubbly, 20 to 25 minutes.

Mix in buttermilk and salt. Add 2 1/2 cups more all-purpose flour. Mix to 
blend, then beat until smooth.

Stir in wheat germ and rye flour to make a stiff dough. Turn out on a floured 
surface and knead until dough is springy, kneading in more all-purpose flour, 
if necessary. Place dough in greased bowl. Cover and let rise in warm place 
until doubled, about 1 1/2 hours.

Punch dough down, let rest 5 minutes. Divide in half. Shape each half into a 
loaf and place in a greased 9 by 5 inch loaf pan. Let rise until doubled, about 
45 minutes.

Lobster BLT 

4 ounces lobster tail meat 
flour for dusting 
egg wash (1 egg+1 cup buttermilk) 
Coconut breading (a cup Japanese bread crumbs, 
1/2 cups coconut and 1/2 cup flour) 
2 slices toasted sourdough bread 
2 ounces Key lime mustard sauce (buy it, or mix some up yourself *) 
2 ounces shredded lettuce 
3 strips crisp bacon 
2 ounces of oil for frying 
A few banana peppers 
Tomato slices, cut thinly 

Gently pound the lobster meat, dust with flour, dip in egg wash and cover with 
coconut breading. In hot olive oil, fry lobster, give it a squirt of lemon, 
drain on paper towel. Spread some oil or butter on sourdough bread and toast 
it, spread with Key lime mustard sauce. Place lettuce, bacon and tomato slices 
on the bread, and place the lobster on top. 

* Key Lime Mustard Sauce 

1 cup mayonnaise 
1/2 cup Dijon 
1 teaspoon chopped parsley 
1 tablespoon chopped cilantro 
2 tablespoons Key lime juice 

Mix all the ingredients together and chill until needed.

Zucchini Slaw

6 medium zucchini, grated (1 1/2 lbs)
2 teaspoons salt
1 large carrot, grated
1 sweet red pepper, julienned
1 red onion, thinly sliced
1 stalk celery, julienned
2 tablespoons each chopped fresh dill and parsley
Dressing:
3/4 cup mayonnaise
2 tablespoons Dijon mustard
2 tablespoons red wine vinegar
1 tablespoon olive oil
1 tablespoon honey
1 teaspoon horseradish
1/4 teaspoon pepper

Combine zucchini and salt; toss well. Place in colander; let stand for 30 
minutes. Rinse under cold water; drain and squeeze out excess moisture. Place 
zucchini in bowl and add carrot, red pepper, onion and celery; toss well. 
Sprinkle with parsley and dill. Combine mayonnaise, mustard, vinegar, oil, 
honey, horseradish and pepper; stir into zucchini mixture.
Taste and adjust seasoning if necessary.

Notes: If making gravy up to 1 day ahead, cool, cover, and chill. To reheat, 
stir over medium-high heat until steaming; or heat in a microwave-safe 
container in a microwave oven at full power (100%), stirring often, until 
steaming. To Transport: Carry hot gravy in a thermos. 
This recipe goes with Turkey with Chili-Sage Glaze
Ingredients
1 cup minced onion 
1 teaspoon fresh thyme leaves or dried thyme 
1/2 teaspoon chopped fresh sage leaves or dried rubbed sage 
2 tablespoons butter or olive oil 
2 quarts fat-skimmed chicken or giblet broth 
8 to 10 tablespoons cornstarch 
 Fat-skimmed drippings from oven-roasted or barbecued turkey 
 Salt and pepper 

Preparation
1. In a 3- to 4-quart pan, combine onion, thyme, sage, and butter. Stir often 
over high heat until onion is lightly browned, 3 to 4 minutes. 
2. In a small bowl, blend about 1/2 cup broth with the cornstarch. Pour 
remaining broth and the turkey drippings into pan with the onion mixture. When 
it boils, add the cornstarch mixture, a portion at a time, until gravy is as 
thick as desired. Add salt and pepper to taste. 
Nutritional analysis per 1/4-cup serving. 
Yield
Makes about 8 cups

Premiere onion rolls? Try Parmesan, pine nuts and poppy seed along with onion 
rolled up in refrigerated breadsticks.


1/4cup finely chopped onion
3tablespoons chopped pine nuts
3tablespoons finely chopped oil-packed sun-dried tomatoes, drained, reserving 1 
tablespoon oil 
1tablespoon poppy seed
1(11-oz.) can Pillsbury® Refrigerated Breadsticks
1oz. (1/4 cup) shredded fresh Parmesan cheese



1 .  Heat oven to 375°F. Grease cookie sheet. In small skillet, combine onion, 
pine nuts and tomatoes; cook and stir over medium heat for 1 to 2 minutes or 
until onion is tender and nuts are toasted. Remove from heat. Stir in poppy 
seed.
2 .  Unroll dough; separate into 2 sections (6 breadsticks each). Spread onion 
mixture over dough. Reroll dough sections; pinch edges to seal. Cut each 
section into 6 rolls. Place rolls cut side up on greased cookie sheet. Brush 
with reserved 1 tablespoon tomato oil. Sprinkle with cheese.
3 .  Bake at 375°F. for 13 to 17 minutes or until golden brown. Serve warm.

Quick Baked Beans with Smoked Bacon

Notes: If assembling through step 2 up to 1 day ahead, cover and chill; bake 
chilled beans about 50 minutes. 

Ingredients
6 ounces thin-sliced apple wood- smoked or regular bacon (about 6 slices), cut 
into 3/4-inch pieces 
2 onions (about 1 lb. total), peeled and chopped 
3 cans (28 oz. each) Boston-style baked beans 
1/2 cup catsup 
2 tablespoons firmly packed brown sugar 
1 tablespoon dry mustard 

Preparation
1. In a 5- to 6-quart pan over medium-high heat, stir bacon often until browned 
and crisp, 6 to 8 minutes. With a slotted spoon, transfer to paper towels to 
drain. Discard all but 1 1/2 tablespoons fat in pan. 
2. Add onions to pan and stir often until they begin to brown and stick to 
bottom of pan, 7 to 9 minutes. Add beans and their liquid, catsup, brown sugar, 
dry mustard, and cooked bacon; mix well. Pour into a shallow 3-quart casserole. 
3. Bake, uncovered, in a 350° regular or convection oven until beans are 
bubbling in the center, 30 to 40 minutes. Serve hot. 
Yield

1can (19 oz) Progresso® red kidney beans, drained, rinsed
1can (15 oz) Progresso® chick peas (garbanzo beans), drained, rinsed
1can (14 1/2 ounces) Italian-style stewed or diced tomatoes, drained


1.Cook and drain pasta as directed on package.
2.Toss pasta and remaining ingredients. Serve warm or cold.

Filled Chocolate Cookies 

Ingredients: 
CREAMY STRAWBERRY FILLING(recipe follows) 
1-1/4 cups (2-1/2 sticks) butter or margarine, softened 
2 cups sugar 
2 eggs 
2 teaspoons vanilla extract 
3 cups all-purpose flour 
3/4 cup HERSHEY'S Cocoa 
1 teaspoon baking soda 
1/2 teaspoon salt 
1/2 cup milk 
Directions:
1. Prepare CREAMY STRAWBERRY FILLING; refrigerate. 

2. Heat oven to 350°F. Beat butter, sugar, eggs and vanilla in large bowl until 
fluffy. Combine flour, cocoa, baking soda and salt; add alternately with milk 
to butter mixture, beating until mixture is well blended. Drop by lightly 
heaping tablespoons onto ungreased cookie sheet. 

3. Bake 11 to 13 minutes or just until cookies are puffed and soft-set. Remove 
from cookie sheet to wire rack; cool completely. 

4. Spread bottom of one cookie with about 1 tablespoon filling; cover with 
another cookie. Repeat with remaining cookies and filling. About 2-1/2 dozen 
filled cookies. 

CREAMY STRAWBERRY FILLING 
1 container (8 oz.) soft cream cheese with strawberries
2 tablespoons butter or margarine, softened
1 tablespoon strawberry spreadable fruit
1/4 teaspoon vanilla extract
Dash salt
1 lb. (3-3/4 cups) powdered sugar
Red food color (optional)

In small bowl, beat cream cheese and butter. Add spreadable fruit, vanilla and 
salt; beat until blended. Gradually beat in powdered sugar. Stir in food color, 
if desired. About 2-1/2 cups filling.

New York Cheesecake

Crust:

1 cup graham cracker crumbs
1 tablespoon sugar
6 tablespoons unsalted butter, melted (divided)

Filling:

2 1/2 pounds cream cheese
1/8 teaspoon salt
1 1/2 cups sugar
1/3 cup sour cream
2 teaspoons pure vanilla
1/2 teaspoon grated lemon zest
2 teaspoons fresh lemon juice
2 large egg yolks plus 6 whole eggs, lightly beaten

Have ingredients at room temperature. Position an oven rack in center; heat to 
325 degrees.

Crust: Stir together crumbs, sugar and 5 tablespoons of the butter. Brush 
bottom of a 9-inch springform pan with some of the remaining butter. Press 
crumb mixture evenly onto the bottom of the pan. Bake 10 minutes, until firm 
and lightly browned. Set aside on cooling rack.

Filling: Beat cream cheese on medium-low with an electric mixer until smooth. 
Scrape down beater and bowl sides with a rubber spatula. Add salt and about 
half the sugar; beat on medium-low about 1 minute. Scrape again, add remaining 
sugar and beat 1 minute. Scrape again, add sour cream, vanilla, lemon zest, and 
lemon juice and beat at low speed just until combined, about 1 minute. Scrape 
again, add yolks and eggs and beat just until combined, about 1 minute.

Brush sides of pan with remaining butter. Scrape filling onto the cooled crust. 
Gently tap pan on work surface to eliminate air bubbles. Bake 1 hour, until 
edges are set but center still moves slightly when you gently shake pan. Turn 
off heat, leave oven door ajar and let cake cool in oven 30 minutes. Transfer 
to a rack. Run a thin metal spatula around edges of pan to loosen. When cooled 
to room temperature, cover pan with foil and refrigerate until cake is 
thoroughly chilled, at least 4 hours, preferably overnight.

Julie's Sour Cream Chocolate Chip Cookies

1 1/2 cups granulated sugar 
2 large eggs 
1/2 cup vegetable shortening 
1 (8-ounce) container sour cream 
1 1/2 teaspoons pure vanilla extract 
2 3/4 cups all-purpose flour 
1/2 teaspoon baking soda 
1/2 teaspoon baking powder 
1/2 teaspoon salt 
1 (18-ounce) package semisweet chocolate chips 
Beat sugar, eggs and shortening in a large bowl until light and fluffy. Beat in 
sour cream and vanilla until smooth. Sift together flour, baking soda, baking 
powder and salt in a small bowl. Gradually add to creamed mixture. Stir in 
chocolate chips. Refrigerate for 1 hour. 
Preheat oven to 400°F. 
Drop dough by tablespoonfuls 2 inches apart onto baking sheets. 
Bake for 8 to 10 minutes or until golden brown around the edges. Let stand for 
2 minutes before removing to a wire rack to cool. 
Makes 36 cookies.

Remove apples; mash or sieve. Return to beer mixture. Serve very hot.

Ingredients: 
1 unbaked 9-inch pie crust 
1-1/2 cups coarsely chopped pecans 
1/2 cup (1 stick) butter or margarine 
1 cup light corn syrup 
1 cup sugar 
1/2 cup HERSHEY'S SPECIAL DARK Cocoa 
4 eggs 
1 teaspoon vanilla extract 
Directions:
1. Heat oven to 325°F. Fit pie crust into 9-inch pie plate according to package 
directions; fold edges under and crimp. Spread pecans evenly on bottom of 
pastry shell.

2. Combine butter, corn syrup, sugar and cocoa in medium saucepan; cook over 
low heat, stirring constantly, until sugar dissolves. Cool slightly. Stir in 
eggs and vanilla until blended. Pour into crust. 

3. Bake 1 hour and 10 minutes or until set. Cool. Serve with whipped cream, if 
desired. 8 servings.


Note: To prevent overbrowning, cover edge of the pie with foil.

Difficulty: Easy 
Prep Time: 15 minutes 
Cook Time: 45 minutes 
Yield: 8 to 10 servings 

Topping: 
1 cup all-purpose flour 
1/3 cup firmly packed light brown sugar 
1/3 cup granulated sugar 
1 cup crushed amaretti cookies, coarsely crushed 
3/4 cup sliced almonds 
1/2 cup (1 stick) unsalted butter, cut into 1/2-inch pieces 
Filling: 
2 tablespoons sugar 
2 tablespoons all-purpose flour 
3 pounds nectarines, pitted and sliced into thick wedges 
8 ounces blueberries 
3 tablespoons Amaretto liqueur 
1/2 cup mascarpone cheese 

To make the topping: Stir the flour and sugars in a medium bowl to blend. Add 
the cookies and almonds and mix well. Add the butter and rub in until moist 
clumps form. 

To make the filling: Preheat the oven to 350 degrees F. Butter a 13 by 9 by 
2-inch glass baking dish.. Stir the sugar and flour in a large bowl. Add the 
nectarines and blueberries, and toss to combine. Stir in the liqueur. 
Spoon the fruit mixture into the prepared dish. Sprinkle the cookie topping 
over. Bake until the nectarines are tender and the topping is golden and crisp, 
about 45 minutes. Cool at least 10 minutes. Spoon the warm crisp into bowls. 
Top each with a dollop of mascarpone cheese and serve.

Garlic-Mushroom Appetizer Recipe

RECIPE INGREDIENTS

1 cup chopped onion
1/2 cup vegetable oil or olive oil
3 tablespoons butter or margarine
2 pounds fresh mushrooms, sliced
1 can (28 ounces) crushed tomatoes in puree, undrained
1 teaspoon salt
1/4 teaspoon pepper
1/2 cup cider vinegar or red wine vinegar
1 bunch fresh parsley, finely chopped (about 1 1/2 cups)
3 garlic cloves, minced
Sliced French bread




RECIPE METHOD

In a saucepan, saute the onion in oil and butter until transparent.

Add the mushrooms; cook for 2 minutes. Add the tomatoes, salt and pepper; cover 
and simmer for 20-30 minutes.

Add the vinegar, parsley and garlic; mix well. Cover and simmer for 10 minutes.

Chill several hours or overnight. To serve, spoon onto slices of French bread.

2 cups all-purpose flour

1 tablespoon sugar

1/2 teaspoon salt

1/2 cup cold butter

1 (1/4 ounce) package active dry yeast

1/4 cup warm water (110° to 115°)

1/2 cup warm milk (110° to 115°)

1 egg, beaten

FILLING:

1-1/2 cups finely chopped pecans or walnuts

1 cup packed brown sugar

1/2 cup butter, softened

GLAZE:

1 cup confectioners' sugar

4 teaspoons water

1/2 teaspoon vanilla extract

2 tablespoons chopped pecans or walnuts

DIRECTIONS
In a large mixing bowl, combine the flour, sugar and salt; cut in butter until 
mixture resembles fine crumbs. Dissolve yeast in warm water; stir into flour 
mixture with warm milk and egg. Beat until smooth (dough will be very soft). 
Cover and refrigerate at least 2 hours but not more than 24 hours. 
Punch dough down. Divide dough in half; refrigerate one half. On a 
well-floured surface, roll remaining half into a 15-in. x 6-in. rectangle. 
Combine filling ingredients. Spread half of the filling down center of 
rectangle in a 2-in. strip. Fold sides of dough over filling; overlapping 
1-1/2-in.; pinch edges to seal. Shape into an oval; pinch ends together. Place 
seam side down on a greased 15-in. x 10-in. x 1-in. baking pan. Repeat with 
remaining dough and filling. Cover and let rise in a warm place for 30 minutes. 
Bake at 375° for 20-25 minutes or until golden brown. Cool for 15 minutes. 
Combine confectioners' sugar, water and vanilla; spread over the kringles. 
Sprinkle with nuts. Yield: 2 kringles (10 slices each).

Ingredients:
shredded cheddar & monterey jack cheese blend 
1/4 teaspoon concentrated liquid hickory smoke 
1/2 teaspoon salt 
2 tablespoons vegetable oil 
3/4 cup diced celery 
1/2 cup diced carrot 
1/4 cup diced green pepper 
2 tablespoons minced garlic 
4 15-ounce cans black beans 
4 cups chicken stock 
2 tablespoons apple cider vinegar 
2 teaspoons chili powder 
1/2 teaspoon cayenne pepper 
1/2 teaspoon cumin 
chopped green onion 
Directions
Heat 2 tablespoons of oil in a large saucepan over medium/low heat. Add onion, 
celery, carrot, bell pepper, and garlic to the oil and simmer slowly for 15 
minutes or until the onions are clear. Do not let the veggies turn brown. 

While cooking the vegetables, pour the canned beans into a strainer and rinse 
under cold water. 

Measure 3 cups of the drained and strained beans into a food processor with 1 
cup of chicken stock. Puree on high speed until smooth. 

When the veggies are done, pour the pureed beans, the whole beans, the rest of 
the chicken stock, and every other ingredient in the list (except the cheese 
and chopped green oinion), to the pot. Bring mixture to a boil, then reduce 
heat and simmer uncovered for 50 to 60 minutes or until soup has thickened and 
all the ingredients are tender. Serve the soup topped with a couple tablespoons 
of the cheese blend and a teaspoon or so of chopped green onion. 

Makes six 1-cup servings.

1/4 cup extra virgin olive oil 
2 tablespoons water 
1 tablespoon lemon pepper 
1 teaspoon seasoned salt 
1 pound flank steak 
Hot cooked rice for accompaniment 
Prepare and heat coals (or gas grill) for grilling. 
In a bowl, combine olive oil, water, lemon pepper and seasoned salt. Rub over 
both sides and edges of steak. 
Grill steak over hot coals for 5 minutes on each side. 
Slice steak into thin slices; serve with the cooked rice. 
Makes 4 servings.

Vegetable and Cheese Mixture
Red Onions Sliced 
1/2 Cup Spinach (Stems Removed) 
1/2 Cup Brown Mushrooms Sliced 
1/4 Cup Yellow Squash Small Diced
1/4 Cup Garlic Minced 3 Cloves
Swiss Cheese Cubed 
3/4 Cup Butter Salted 
1 Tablespoon

Quiche Batter
2 cups Heavy Cream 2 Cups 
5 Eggs Large AA 
1 Teaspoon Salt 
1/2 teaspoon Black Pepper Ground 
1/2 teaspoon Rosemary Fresh Minced 

Quiche Crust
1 - 9 inch pre made quiche or pie crust (This crust shouldn’t be sweet but 
savory) 

Preparation for Vegetable and Cheese Mixture:
In a medium sauté pan over medium high heat melt 1 Tablespoon of butter. Add 
red onion, mushrooms, yellow squash and the garlic and sauté for 2-4 minutes 
until slightly translucent. Finish with the spinach and cook until it has 
slightly wilted, drain off any excess liquid. Set this mixture aside along with 
the cheese and proceed to make the egg batter.

Preparation for Quiche Batter: 
In a medium mixing bowl beat 5 eggs and whisk in the heavy cream until 
incorporated. 

Preparation for Quiche:
First pre-bake the crust according to directions on the package. Let this cool 
and place the vegetable mixture and the cheese in the bottom of the quiche 
shell. Fill the crust with the egg mixture until it is 1/8 of an inch from the 
top. Place the filled crust onto a cookie sheet to catch any run off. Bake the 
quiche at 350 F for 18-25 minutes or until the batter has set. Let the quiche 
cool for 10 minutes and serve.

Makes One 9 inch Quiche - Serves 5

Makes: About 3 (1-cup) jars or 48 servings, 1 Tbsp. each

3 cups prepared strawberries (buy about 3 pt. fully ripe strawberries) 
3/4 cup water 
1 box SURE.JELL For Less or No Sugar Needed Recipes Premium Fruit Pectin 
1/2 cup SPLENDA® No Calorie Sweetener, Granular or 12 SPLENDA® Packets No 
Calorie Sweetener 



BRING boiling-water canner, half full with water, to simmer. Wash jars and 
screw bands in hot soapy water; rinse with warm water. Pour boiling water over 
flat lids in saucepan off the heat. Let stand in hot water until ready to use. 
Drain jars well before filling. 
STEM and crush strawberries thoroughly, one layer at a time. Measure exactly 3 
cups prepared fruit into 6- or 8-quart saucepot. Stir in water. Gradually add 
pectin, stirring until well blended. 
BRING mixture to full rolling boil (a boil that doesn't stop bubbling when 
stirred) on high heat, stirring constantly. Boil exactly 1 minute, stirring 
constantly. Remove from heat. Stir in SPLENDA® Granular or SPLENDA® Packets. 
Skim off any foam with metal spoon. 
LADLE immediately into prepared jars, filling to within 1/8 inch of tops. Wipe 
jar rims and threads. Cover with 2-piece lids. Screw bands tightly. Place jars 
on elevated rack in canner. Lower rack into canner. (Water must cover jars by 1 
to 2 inches. Add boiling water, if necessary.) Cover; bring water to gentle 
boil. Process 10 minutes. Remove jars and place upright on towel to cool 
completely. After jars cool, check seals by pressing middle of lid with finger. 
(If lid springs back, lid is not sealed and refrigeration is necessary.)


Substitute 
Prepare as directed, substituting 1 thawed can (12 oz.) frozen white grape 
juice or apple juice concentrate for the 3/4 cup water. Makes about 4 (1-cup) 
jars or 64 servings, 1 Tbsp. each. (Nutrition Information Per Serving with 
White Grape Juice: 20 calories, 5g carbohydrate, 4g sugars. Nutrition 
Information Per Serving with Apple Juice: 15 calories, 4g carbohydrate, 3g 
sugars. )

Inversion Method 
To use inversion instead of boiling water bath method, turn jars upside-down 
after bands have been screwed tightly. After 5 minutes, turn upright. Avoid 
improper lid seal by filling jars immediately with hot fruit mixture.

2 1/1 lbs. Baby Red Potatoes (quartered)
1/2 lb. raw bacon (diced)
1 Jumbo Yellow Onion (diced)
1/4 Bunch Celery (diced)
1 quart water
2 ounces Chicken Base
1 quart Milk
1 tsp. Salt
1 tsp. Black Pepper
1 1/2 Sticks Margarine
6 ounces Flour
1 C. Whipping Cream
1/4 Bunch Chopped Parsley

Directions

Boil Potatoes in water for 10 minutes. Drain and set aside. In a large, heavy 
pot, sauté bacon, onions, and celery over medium-high heat until celery is 
tender. Drain bacon grease and return bacon, onions, and celery to pot. Add 
milk, water, chicken base, salt and pepper. Heat over medium-high heat until 
very hot. Do Not Boil. In a heavy, large saucepan, melt margarine and add flour 
(called a roux). Mix well. and allow to bubble, stirring for 1 minute. While 
constantly stirring soup, add the flour & margarine mixture (roux) slowly. 
Continue stirring soup until thick and creamy. Stir in potatoes and parsley. 
Serve while hot. Garnish with shredded Colby cheese, fried bacon bits, and 
chopped green onions or all three. My personal suggestion: all three is the 
best.

Vanilla Crepes With Orange Sauce

1 Cup milk
2 tablespoons vanilla extract
1/2 cup sugar
3 tablespoons all-purpose flour
3 Eggs -- divided
16 Crepes
2 tablespoons melted butter
Orange sauce -- (see recipe)

Scald milk and vanilla.. Set aside.

Combine sugar, flour, and egg yolks. Stir in milk mixture.. Cook over 
medium heat, stirring constantly, until mixture comes to a boil. Cook a 
few seconds; remove from heat.

Beat egg whites until stiff; fold gently into egg yolk mixture.

Place about 3 Tbsp. batter on each crepe; roll crepes loosely over 
batter.

Place on cookie sheet; brush crepes with melted butter.

Bake at 350 degrees for 20 to 25 minutes.

Arrange crepes on platter; serve immediately with Orange sauce.

New Orleans Muffuletta

Celebrate the spirit of Mardi Gras with this New Orlean's inspired sandwich.


Estimated Times

Ingredients

1jar (16-oz.) mixed pickled vegetables, drained, finely chopped


1/2cup finely chopped stuffed green olives 


1can (4.25-oz.) chopped pitted ripe olives 


3tablespoons olive oil 


1tablespoon finely chopped fresh garlic 


1(1-lb.) loaf round Italian bread, unsliced


1/4pound thinly sliced deli turkey 


4(.75-oz.) slices deli American cheese 


1/4pound thinly sliced deli hard salami 


4(.75-oz.) slices deli provolone cheese 


Directions

Combine pickled vegetables, green olives, ripe olives, olive oil and garlic in 
medium bowl; mix well. Set aside.

Cut bread in half horizontally; remove bread in center, leaving ½-inch thick 
bread shells.

Divide olive mixture between bread shells; press firmly. Layer bottom bread 
shell with turkey, American cheese, salami and provolone cheese. Carefully top 
with remaining bread shell. Wrap tightly in plastic food wrap; refrigerate at 
least 2 hours or overnight.

To serve, secure with toothpicks. Cut into wedges.

Pizza Burgers
Keep this cooked ground meat mixture on hand refrigerated or frozen for 
quick-to-fix sandwiches that appeal to all ages. 


Ingredients
1 lb. lean ground beef
8 oz. mild cheddar cheese, shredded
1 can (4 1/2 oz.) potted meat or deviled ham
1 tsp. dried oregano leaves
1/2 tsp. dried sage leaves
1/2 tsp. fennel seed
1/2 tsp. mixed Italian herbs
1/8 tsp. garlic powder
1 can (8 oz) tomato sauce
1/4 lb. sliced Mozerella cheese
Hamburger buns OR large loaf French bread

Directions
Brown ground beef in skillet over moderate heat, stirring until pinkness 
disappears.

Stir in cheese, potted meat, oregano, sage, fennel, Italian herbs and garlic 
powder. Add tomato sauce. (At this point mixture may be refrigerated for later 
serving.)

Reheat mixture until bubbly. Spoon onto split hamburger buns or on length of 
French bread which has been split horizontally. Top with the cheese.

Place under broiler. Broil until cheese melts, about 3 minutes. Serve 
immediately.

Comments
Any leftover mixture freezes well so it is a good idea to make more than you 
can use to save time later.

Mix all together. Refrigerate until ready to serve.

NOTE: Extra pineapple juice can be frozen ahead of time to make a frozen block, 
then put in punch to keep cool while serving.

Peanut Butter-Chocolate Chip Pound Cake

Makes: 12 servings

Stir a few extras into a boxed cake mix for an extra-special cake baked in a 
fluted tube pan.


Cake
1box (1 lb 2.25 oz) yellow cake mix with pudding
1cup milk
1/2cup creamy peanut butter
1teaspoon vanilla
3eggs
1bag (12 oz) miniature semisweet chocolate chips (2 cups)
Icing
1/4cup creamy peanut butter
1bag (6 oz) semisweet chocolate chips (1 cup)
Garnish
2tablespoons chopped peanuts



1 .  Heat oven to 350ºF. Generously grease with shortening and lightly flour 
12-cup fluted tube pan. In medium bowl, beat cake mix, milk, peanut butter, 
vanilla and eggs with electric mixer at low speed 1 minute, scraping bowl 
constantly. Beat 2 minutes at medium speed, scraping bowl occasionally. Stir in 
miniature chocolate chips. Pour into greased and floured pan.
2 .  Bake 45 to 55 minutes or until toothpick inserted near center comes out 
clean and top springs back when touched lightly near center. Cool in pan 10 
minutes. Invert onto wire rack or heatproof serving plate; remove pan. Cool 
completely, about 1 1/2 hours.
3 .  In small saucepan, melt all Icing ingredients over low heat, stirring 
constantly until smooth. Drizzle warm icing over top of cooled cake, allowing 
some to drip down sides. Sprinkle peanuts over icing.



High Altitude (3500-6500 ft):Bake 50 to 60 minutes.

Garlic and Herb Crescent Ornament

Makes: 20 servings  

This appetizer looks like it's for the holidays, but you can make it 
anytime--just don't add the top of the ornament as described in step 5.


Ornament
2(8-oz.) cans Pillsbury® Refrigerated Crescent Dinner Rolls
Topping
2oz. cream cheese, softened
1/3cup whipping cream
1/2cup garlic and herb spreadable cheese
Garnish
2gold or silver baking cups
Sprigs fresh rosemary
Choice of red, yellow or green bell peppers, carrots, zucchini, cherry tomatoes 
and fresh chopped thyme



1 .  Heat oven to 375°F. Spray 12-inch pizza pan with nonstick cooking spray. 
Remove dough from 1 can, keeping dough in one piece; do not unroll. With palms 
of hands, gently roll dough in one direction into 10-inch log. With serrated 
knife, cut log into 20 slices. Repeat with second can of dough.
2 .  At center of spray-coated pizza pan, arrange 2 slices side by side, 
pressing together to flatten inside edges and to form a circle. Place 7 slices 
in ring around center slices; press together lightly. Arrange 12 slices in the 
next ring; press together lightly. Arrange 19 slices in the last ring, 
overlapping edges slightly in ring. (See photo.) Press together gently.
3 ..  Bake at 375°F. for 13 to 18 minutes or until edges are golden brown. 
Gently loosen ornament from pan; cool 5 minutes. Gently remove ornament from 
pan; slide onto wire rack. Cool 15 minutes or until completely cooled.
4 .  Meanwhile, in medium bowl, beat cream cheese at medium speed until soft 
and fluffy. Slowly beat in whipping cream, continue beating until fluffy. Beat 
in spreadable cheese until well blended. Cover; refrigerate until serving time.
5 .  Place cooled ornament on large round serving tray, rearranging as 
necessary if crescent slices have separated. Spread entire ornament with cream 
cheese mixture. Shape one foil baking cup metal ornament top, folding in half 
at base of cup. Cut small slit in top. Fold second baking cup inward from 
outside edges to make metal strip. Twist together at base to make loop for 
ornament top. Insert base into slit. Slide springs of rosemary through loop to 
resemble branch of pine tree. Garnish as desired with vegetables and thyme.

Juice and grated peel of 1 orange

Juice and grated peel of 1 lemon

1 cup sweet red wine or cranberry juice

1/2 cup light corn syrup

1/2 teaspoon ground mustard

1 can (16 ounces) whole-berry cranberry sauce

Drippings from a baked ham, optional

2 tablespoons cornstarch, optional

2 tablespoons cold water, optional
DIRECTIONS
In a saucepan, combine orange and lemon juices and peel, wine or cranberry 
juice, corn syrup and mustard.. Simmer for 30 minutes. Add the cranberry sauce 
and ham drippings if desired; heat through. If a thicker glaze is desired, 
bring just to a boil. 
Combine cornstarch and water; add to glaze. Cook and stir until slightly 
thickened. Serve warm over sliced ham. Yield: 3-1/2 cups.

Ingredients

1pound uncooked yams, peeled and sliced into 1/8-inch-thick slices


2large apples, cored and sliced


2/3cup Apple NESTLÉ® JUICY JUICE® All Natural 100% Juice 


2tablespoons cornstarch 


3tablespoons water 


1/3cup granulated sugar 


1/2teaspoon ground cinnamon 


1/3cup wheat germ 


Directions

PREHEAT oven to 350° F. Grease 2-quart casserole dish. 

ALTERNATELY layer yams and apples in casserole dish.

HEAT Juicy Juice in medium saucepan over high heat. Mix cornstarch with water 
in small bowl or cup. When juice is boiling, stir in cornstarch mixture; cook, 
stirring constantly, until thickened. Stir in sugar and cinnamon. Spoon sauce 
over yam and apple mixture. Sprinkle wheat germ on top. 

BAKE for 40 to 45 minutes or until apples are tender.

Serving Size: 6

RECIPE INGREDIENTS

1 1/2 cups fresh corn kernels (about 3 ears)
1 teaspoon vegetable oil
1 1/2 cups diced peeled mango
1/4 cup fresh lemon juice
2 tablespoons diced sweet onion
2 tablespoons minced fresh mint
2 tablespoons minced fresh cilantro
1 1/2 teaspoons grated peeled fresh ginger
1/4 teaspoon salt




RECIPE METHOD

Preheat oven to 400 degrees F.

Combine corn and oil, tossing well. Place on a baking sheet, spreading evenly. 
Bake at 400 degrees F for 15 minutes. Cool. Combine corn, mango, and remaining 
ingredients in a bowl; toss gently.

Vegetable Beef Soup

1 medium onion
1 stalk of celery
2 medium carrots
1 potato
1/2 cup canned tomatoes
1/4 lb. chopped beef
Salt
Pepper
A few parsley flakes
1 beef bouillon cube
Lawry's seasoning salt
1/4 cup barley

Cut onion, celery, carrots and potato in small pieces. Add tomatoes; add water 
to cover; heat. When it comes to boil, add beef, broken up. Add salt, pepper, 
parsley flakes, bouillon cube and seasoning salt to taste. Let cook 15 minutes, 
then add barley. Let cook 15 minutes more. Simmer slowly, adding more water if 
necessary.

Serves 2.

1/2cup Original Bisquick® mix
1cup milk
2eggs
1/2cup French-fried onions

1.
Heat oven to 400ºF. Grease 9-inch pie plate. Stir together cheeses and bell 
pepper; spread in pie plate. 
2.
Stir Bisquick mix, milk and eggs until blended. Pour into pie plate; sprinkle 
with onions. 
3.
Bake about 35 minutes or until golden brown and knife inserted in center comes 
out clean. Cool 5 minutes.

Add water, lemon juice, sugar and salt if desired; bring to a boil. Cook and 
stir for 2 minutes. Reduce heat; simmer, uncovered, for 5 minutes. Remove from 
the heat; stir in sour cream and dill. Yield: 6 servings.

Inactive Prep Time: 1 hour 40 minutes 
Cook Time: 16 minutes 
Yield: 6 doughnuts 

1 cup milk 
3 tablespoons unsalted butter 
1 package rapid rise dry yeast 
3 tablespoons sugar 
3 egg yolks, slightly beaten 
3 1/2 cups (1 pound) cake flour 
1/2 teaspoon salt 
Fat for frying, such as canola oil 
10 ounces raspberry jam 
2 cups confectioners' sugar 

In a small saucepan, scald the milk by heating just until bubbles form around 
the edge of the pot; the milk should not actually boil. Remove from heat and 
whisk in butter to melt, allow to cool 10 minutes. Transfer the mixture to the 
bowl of a standing mixer fitted with a dough hook. Bloom the yeast by 
sprinkling it over the warm milk and butter. Add the sugar and stir gently to 
dissolve. Let stand 10 minutes until foam appears, this indicates the yeast is 
active. Turn mixer on low and add the egg yolks then gradually add the flour. 
When the dough starts to come together, increase the speed to medium and add 
the salt. Stop the machine periodically to scrape the dough off the hook. Mix 
just until the dough is supple and elastic, about 5 minutes. Once smooth, turn 
dough out on a lightly floured surface and knead gently for 2 minutes. Place 
the dough in a greased bowl, turning to coat all sides. Cover with plastic wrap 
and let rise until doubled in size,
 about 1 hour. If you have time, let rise in the refrigerator for several hours 
because chilling will make the dough easier to roll out. Roll the dough out on 
a lightly floured surface to about 1/2-inch thick and cut with a floured 
biscuit cutter or water glass, about 3-inches in diameter. Transfer to a 
greased baking sheet, and allow to rise again for 30 minutes. Heat 3-inches of 
vegetable oil or shortening to 375 degrees F in an electric fryer or deep 
saucepan. Slip doughnuts in the hot oil, top-risen side down, and fry doughnuts 
until golden, about 4 minutes each side. To keep the oil temperature constant, 
fry 3 at a time. Drain on paper towels. Fit a pastry bag with a small tip and 
fill with jam. Poke a small hole in the side of the doughnut and pipe the jam 
inside. Dust heavily with confectioners' sugar while still slightly warm.

Whole-Grain Buttermilk Waffles

Bran cereal is the secret to fiber-rich whole-grain waffles.. From 
eatbetteramerica. 

Prep Time:30 min 
Start to Finish:30 min 
makes:4 servings (two 4-inch waffles each)


Ingredients
1cup Fiber One® cereal
1 1/4cups buttermilk
1egg, slightly beaten
2tablespoons vegetable oil
1teaspoon vanilla
3/4cup all-purpose flour
1tablespoon sugar
1/2teaspoon baking powder
1/2teaspoon baking soda
1/4teaspoon salt
Maple syrup, if desired
Fresh raspberries, if desired

Directions

Heat waffle maker. Place cereal in resealable food-storage plastic bag; seal 
bag and crush with rolling pin or meat mallet (or crush in food processor). 



In large bowl, mix cereal and buttermilk; let stand 5 minutes. Stir in egg, oil 
and vanilla. Stir in remaining ingredients just until smooth. (Batter will be 
thick.)

For each waffle, brush hot waffle maker with vegetable oil. Spread batter onto 
center of hot waffle maker. (Waffle makers vary in size; check manufacturer's 
directions for recommended amount of batter.) Close lid of waffle maker.

Bake about 5 minutes or until steaming stops and waffle is golden brown. 
Carefully remove waffle. Serve immediately. Repeat with remaining batter. Serve 
with maple syrup amd raspberries.

High Altitude (3500-6500 ft): Bake about 7 minutes.

2packages (8 ounces each) cream cheese, softened
1/2cup apricot, peach or other flavor preserves

1.
Beat cream cheese and preserves in medium bowl with electric mixer on medium 
speed until fluffy.
2.Store covered in refrigerator.

Rosemary Roasted Chicken & Potatoes

Prep Time: 20 min
Total Time: 1 hr 45 min
Makes: 6 servings

6 oz. (3/4 of 8-oz. pkg.) PHILADELPHIA Cream Cheese, softened 
2 tsp. dried rosemary leaves, divided 
1 tsp. pepper, divided 
1 whole roasting chicken (3-1/2 lb.) 
6 Tbsp. KRAFT Zesty Italian Dressing, divided 
2 lb. red potatoes, cut into 1-inch chunks 
6 slices OSCAR MAYER Bacon, crisply cooked, drained and crumbled 
2 green onions, sliced (about 1/2 cup) 



PREHEAT oven to 375°F. Mix cream cheese, 1 tsp. of the rosemary and 1/2 tsp. of 
the pepper. Starting at neck of chicken, use handle of wooden spoon or fingers 
to carefully separate skin from meat of the breast, thighs and legs of chicken, 
trying not to tear the skin. Spoon cream cheese mixture under skin; use fingers 
to push and spread some of the mixture out to thighs and legs. Place chicken in 
shallow baking pan. Brush with 2 Tbsp. of the dressing. 
TOSS potatoes with remaining 4 Tbsp. dressing, remaining 1 tsp. rosemary and 
remaining 1/2 tsp. pepper in separate 13x9-inch baking pan. Bake chicken and 
potatoes 1-1/4 hours or until chicken is cooked through (165ºF), stirring 
potatoes every 30 min. 
TRANSFER chicken to large serving dish, reserving juices in pan. Let chicken 
stand 10 min. before serving. Meanwhile, add bacon and onions to potatoes; mix 
lightly. Spoon around chicken in dish. Spoon off and discard fat from reserved 
chicken juices in pan. Serve chicken and potato mixture with reserved juices.


Serving Suggestion 
Serve with a crisp, mixed green salad tossed with your favorite KRAFT Dressing 
to round out the meal.

Note 
Don't be alarmed if you tear the skin a bit, it will still taste deliciously 
moist.
