Dear Liz, Thank you for your thoughts on our ANZAC day celebrations tomorrow. Fortunately one of the bigger services in Adelaide will be held just round the corner from where we live. We will be going to the Youth Vigil service at 8pm tonight then attend the dawn service in the morning. Sadly heavy rain and thunderstorms are forecast for early morning tomorrow so best I find my raincoat and waterproof shoes, items that don't see much light of day in this fair city, the driest city, in the driest state of the driest continent. Thanks David in Ballarat I've found the following recipes - now to search for the stottie cakes Recipes enjoyed by the Geordie folk (North East UK) PEASE PUDDING Two Optional Recipes Recipe 1 Ingredients: 250 gm of diced bacon (no fat or rind) Salt Pepper 475g (about a one pound pack) Split Peas Method:(1) Place Split Peas in large ovenproof dish. Cover with Water 475g of split peas to every 2 litres of water add salt and pepper to season. Allow to stand over night. Add small pieces of chopped bacon (not the fat or rind) into mixture. As to your own requirement, remembering this is a split pea rather than a meat recipe. Place middle shelf of oven, Gas Mark 5 150C - cook until set. Until this reaches a nice medium consistency (not too thick ot thin as once cool it sets even thicker.. When cooled place in refrigerator. Chill and serve with, salad or - with cold ham sandwiches or even with Roast Potatoes and beef with Gravy. Many grown up's today will remember waiting as children, for this being made, and then eating it hot, pasted onto fresh bread and butter. PEASE PUDDING Recipe Two Ingredients: Large Ham Shank Salt Pepper 475g (about a one pound pack) Split Peas Method:(2) Place Large sized ham shank in large cooking pot cover with water. Bring to the boil, then drain the water. Replace with new clean water, and bring back to the boil. Remove the ham shank, break off very small pieces of the meat into your stock. Enough to your own taste. Not a lot though as this is a split pea recipe rather than a meaty recipe. Add the split peas (475g to every 2 litres of water) turn heat off and allow to steep for 4 hours. Next bring back to boil and then simmer, keep stirring and checking, as you only want the mix, to reach a nice medium consistency, (not too thick or thin) as once this cools it sets thicker. When cooled place in refrigerator. Chill and serve with, salad or - with cold ham sandwiches or even with Roast Potatoes beef and Gravy. Has many other uses. And the recipe for stottie cake is: *Ingredients* 1590g Plain flour 30g Salt 70g White Fat (Nanna used to use lard) 14g Sugar 90g Yeast 850g Water 30g Milk Powder *Method* Sieve all dry ingredients together and rub in the fat Dissolve yeast in warm water, then add to ingredients and mix thoroughly Knead for 10-15 minutes Cover dough with a cloth and allow to stand for 30 minutes in a warm place Knead dough again and allow to stand for a further 30 minutes Weigh dough into 285g pieces, shape pieces into a round ball and allow to stand for a further 10 minutes Roll dough pieces out to a diameter of about 22cm, cover and leave in a warm place for 20 minutes Place on hot tray and press a shallow hole in the middle with a finger Cook in hot oven (gas mark 8/230C/450F), turning after 8 minutes and baking until golden brown Allow to cool, but remember that the best way to eat a stotty is when it's still warm and fresh from the oven spread thickly with either butter or pease pudding. Hi Helene, Helene, the froggy from Melbourne, who's sick of the heat. Why can't we exchange with some of that lovely snow you're having in Europe and the US, I don't know!! I do, I was talking to a lady in Ingersoll (near Toronto) this morning and she said that the temperature was minus 9 degrees F with a wind chill factor taking the temp to minus 32 deg F. The back lawn was covered with 2 feet of snow! and she was sick of 'cabin fever'. Hi All, especially the Oz spiders on this list, There is about 65mm (in the last 24 hours) in my bucket outside and their is concern about the Patawolonga River flooding down at Glenelg, a suburb at the coast in a direct line west (approx 8kms of the City of Adelaide). It is fantastic to have so much rain - I don't think I've seen as much rain since we moved from Melbourne to Adelaide 13 years ago. Our local park will probably have ducks on it in the morning. Hi Ruth and all, Yep, you are correct Ruth, we have bronze pigs in the Mall in Adelaide. I've got no idea why they were made and installed but they are a talking point with visitors. Don't think that pig reaching into the rubbish bin has ever found anything to eat though. :-) We do have the Mt. Compass Cow Race though - hmm, its only about half an hour down the road from me, maybe I should go to the next event and report back to you all. It was 44.3 on Saturday and today I've just been informed that it got to 42 deg. C - no wonder the air con was struggling. I sat outside in the twilight hours tonight and made lace with the south easterly gully breezes howling in - relief at night is wonderful. :-).Only one fire that I know of but boy oh boy did those water bomber planes move in fast - no sooner did we see the smoke than the smallish grass fire in the nearby gorge was brought under control *real* fast.
