Can't help you directly on the choice between Touch and Audiocom-modded
duet, but just thought i would complicate things a bit further. I had
my DAC modded by audiocom (and was very happy with this), but am aware
from my discussions with mark that he does not feel able to mod the
Touch
A higher end Atom should probably be fine as long as you avoid formats
that need transcoding. If you used mp3, 16 x 256kbps is only 4mbps.
This would probably work fine over wifi as long as you are careful to
use a good router (802.11n with MIMO antennas) and the server is not
wireless.
Just a thought. You mention the DAC output is via RCA phono jacks.

Use the cheap drives, you don't need 7200 rpm drives to stream music. I
would highly recommend using a Linux based operating system.

Help!! I've just received a NAD M2 digital amp which in theory can

yes, bit perfect-ness is absolutely not an issue.
Just take decent DAC with both SPDIF and USB inputs and listen to
