On the Cat 6k you can do IP Prec or DiffServ. Otherwise you have to map 802.1p to Prec or DiffServ. By summer a lot more models will be able to do this such as the 2900 and 4900, 4000, etc. Nortel already does this on their Business Policy Manager switch and it's pretty reasonably priced at
